Looking for cleaner alternatives for a few foods

 

Doesn't have to be squeaky clean, but cleanER at least

1.  Something I can whip up or buy that is better than store bought peppercorn ranch salad dressing for salad (lots of times I'm fine with oil and vinegar or nothing but sometimes just not!)

2.  soups - no time to make scratch even on the weekends, so something canned or even bought from wegmans might work - they make their own.

 

Yes these are inspired by recent posts.  I was inspired to make a salad tonight!  I will say that tonight I had some monterey jack and cayenne pepper cheese - one slice - so I cut it up tiny and pretended it was peppercorn dressing,

  • 1. Make your own using plain yogurt as a base, and dried herbs.

    2. Let a slow cooker do the cooking for you. I have a hard time believing you don't even have ten minutes anywhere to slice some veggies.

  • Yeah, the slow cooker issue - I have a good one, want to use it, but can't babysit it all day - have to be in and out.  DH being a fireman is dead set against leaving the house with an appliance on.  So there the slow cooker sits in it's package.

    So you think plain yogurt, black pepper, maybe garlic, onion and parsley, a little parmesan cheese? Do you think it needs any oil? I don't have a lot of scratch cooking experience.  I'd rather just eat things plain or buy it normally:)

  • do your slow cooker right before bed and set it on low for eight hours!  you'll have soup all week!

    Ranch dressing - and you can make it even simpler by eliminating the mustard, paprika, and garlic if you want.  The really key ingredients are something creamy, like yogurt, and herbs like chives. 

    I also like feta on salads.  It's creamy, salty, and tangy all on its own, so I don't need dressing when I have it.

  • Same issues with things on when sleeping, but I do have room to work with him on that one (plus he works some nights.)

    Is mayo considered clean-ish?  I can do that recipe.

  • Alright, why am I finding this harder than it needs to be?  I looked up recipes for crock pot vegetable soup, with variations on the search such as "clean" or "vegetarian."  (I"m not a vegetarian, but was for 10 yrs, so a lot of things I enjoy are vegetarian.  I only tried adding that to the search because I thought it would make the recipe simpler or cleaner than I was finding.)

    SO everything I find includes premade things such as cans of tomato soup, bouillon cubes, etc.  If I can use those, I might as well buy premade soup, right?

     

    Anyone have a recipe they use or is canned soup really not a big deal?

     Veggie soup:

    Broth (canned or homemade or, waitferit, water)

    diced veggies

    garlic 

    salt, pepper, herbs ( thyme, sage, red pepper flakes)

     

    Crockpot until desired veggie doneness. Depends on density and size of veggies. Probably 4 hours on low.

    Want to make it more complex? Saute or roast the veggies first.

    Want to add some carbs? Throw in some barley, rice, whathaveyou; add hour. 

  • Potato leek soup is the fastest vegetarian soup I've ever made. I saute 2-3 diced leeks (white & light green parts with salt & pepper) for a couple minutes in butter, toss them into a pot with 5-6 chopped potatoes and 6 cups of veggie broth/ water with marjoram, thyme and parsley, let it simmer for about 20 minutes and it's done! I pour about half in a blender to puree and then mix it back in to make it creamier but that's not totally necessary.

    Essa, Srsly, I was looking to learn something, not be made fun of.  I did not know putting vegetables in water would make soup. I figured it had to be harder.  I asked about the canned broth.  If I'm going to buy broth in a can, why not just buy the whole soup in a can for the amount of sodium that gets you.  Thought I mentioned that I do not have scratch cooking experience or a lot of time, so making my own broth is not like a given for me.

     

    On this board we help each other.  We lend out strengths to others because our strengths are not all in the same areas. It's okay to ask questions here.

     

    Go somewhere else if you want to make yourself feel better by putting others down.

  • I make this "caesar" dressing quite a bit:

    1/3 cup fat-free plain yogurt 1/4 cup reduced-fat mayonnaise 1 tablespoon red wine vinegar 2 teaspoons Dijon mustard 1 teaspoon Worcestershire sauce 1/4 teaspoon garlic powder 1/8 teaspoon pepper 

    Whisk together.  I have no idea how clean some of these ingredients are (mayo and worcestershire sauce for instance) but you or someone else might know of cleaner subtitutes. 

    As for soups I actually really like the soup for the "soup diet" fad, probably because I love cabbage.

    I cut the recipe in half or more, because I'm obviously not going to do the diet so I don't need 28 cups of soup - I just like the soup for lunches at work or something quick to heat up when I'm home alone for dinner.  I like to use it as a base and I add things to it like shrimp, chicken, rice or noodles, or whatever I'm in the mood for.   

  • I love the blog www.ohsheglows.com - she has some great recipes and is a vegan and a very clean eater.  You night be able to find something there. :)

  • Thanks, guys!  And sorry I couldn't take it last night.  I can dish it out at times, though not on h and f.  That just seems wrong to me.
