  • I have no idea either.  FI is coming back tonight from Atlanta and DS is working.  Just me and the dog until I have to leave at 9:00 tonight to drive to the airport to pick up FI.

  • H made a huge thing of rice and beans and pork the other day and he has been eating that for lunches - I haven't really had any, so I'll probably eat that.

    I have had zero cooking ambition lately!

  • Leftovers from the other night to save prep time, pork tenderloin and probably sweet potato and spinach. Tonight is wine night - we're moving our red into the second carboy and the white into the first carboy, which will take some time. We get to taste it though and I'm excited!

    I kind of want to make some sort of concoction of rice, beans and chicken.

    Or I want to try ML's roasted broccoli recipe.  

    I have to go to a board meeting tonight, then I need to go shopping... so I'm sure by the time I get home at like 9pm tonight, I wont have much ambition for anything complicated.

    It's not what we're having, but hamburgers and garlic fries is what you should make.

    Buy a bag of shoestring fries (trust me, this works best with shoestring fries) and bake them. While that's doing it's thing, take about 5 or 6 cloves of garlic and dice it up really small and throw it in a small, microwave safe dish. Dump about 2 teaspoons of dry thyme leaves in with the garlic. Then dump about half a stick of butter on top. Throw in the microwave long enough for the butter to melt. When the fries are done, dump the garlic-buttery goodness on top and toss to coat everything. OMFG are they good.

    Pardon the non-technicalness of my recipe. I usually just wing it.

     

    ETA: Seeing the update that you're a vegetarian... I will now admit that I've eaten just those fries as a meal. They're that dang good. So, scrap the burger unless you're into veggie burgers and just make the fries.

    I don't use the egg and I use pillsbury grands homestyle biscuits for the topping.  Delicious!  I made them last night again, for seriously the second time in a week.  I'm hooked.

    This is what I am leaning towards, but I am trying to save that pizza for the night I get back from my trip. 

     

    Sorry, Morty. I am being difficult. Not only am I veg (no fish- those are animals, too), but I also am running low on ingredients. I am going out of town for 2 weeks on Sunday and so I will not be going to the store this week (hopefully). It's going to be a "get creative" night all week long. Exciting, isn't it? The truth is, there is no helping me.

  • Baked ziti with a green salad. We're having angelfood cake with strawberries for dessert. Last night was zucchini and black bean quesadillas with sweet potato oven fries seasoned with cumin.
