What to make with Shrimp Scampi?

I am cooking for MILs birthday on Friday and she requested Shrimp Scampi, but no pasta. I need a side dish or 2, some type of bread and a dessert with strawberries. Any ideas? THANKS!

  • I would say a nice Italian bread to soak up the yummy scampi since there is no pasta. Maybe a nice salad either a fresh vinegrette. Lightly saut?ed some beans  or wilted greens like kale or collards to add an earthy, bitterness to hit another note?You could definitely do a nice heavy dessert since you aren't having pasta, something very decadent or go nice and light and do a strawberry sorbet or something?
  • I would serve it over rice or a big hunk of Italian bread. Or maybe broccoli? Shrimp and broccoli go well together in my mind, and the sauce would be tasty on the broccoli, too!

  • I would serve it over white rice with broccoli and some crusty bread on the side. For dessert, you can make chocolate covered strawberries.
  • I would do rice and broccoli saut?ed with garlic and oil or a salad. Definitely some garlic bread and for dessert you could do a cheesecake with strawberries, brownies with strawberries or strawberry shortcake.

  • I'd go with sauteed spinach with a drizzle of balsamic vinegar, garlic bread to soak up the scampi sauce, and something like an antipasto salad.  For dessert, I have a berry trifle with ricotta whipped cream recipe that would be a really easy make-ahead dessert.  Use just strawberries, and I think I'd swap out the lime for lemon in the cake since I feel like lemon would go better with the rest of the dinner (or use a storebought pound cake if you're short on time).

  • If your scampi recipe has a lot of sauce, I actually wouldn't do garlic bread, but, rather, a nice crusty Italian to soak it up. 
  • I would do the salad of some sort and the crusty Italian bread.  Garlic bread might be too greasy.  You could serve the shrimp in a seperate little dish to keep the butter sauce from running (kind of like they do at Red Lobster, lol).  This would keep it a light lunch and people will have lots of room for your yummy dessert!

     

    Personally I don't like the rice idea but that's obviously just a personal taste.  I just don't feel like rice goes with it.

  • I would serve it over polenta.  Spinach on the side would also be great (or a salad).  Crusty italian bread is always a must!
