Looking for macaroni & cheese recipe

Please post your FAVORITE macaroni and cheese recipe.  I'm open to any kind of cheeses, love bacon, and don't care about the fat content.....I mean if you're going to eat mac and cheese you might as well do it up, right? lol

  • MACARONI MICKEY MOUSSE (adapted from Walt Disney's recipe)1 3/4 cups elbow macaroni, cooked 
    1 ? cups milk1 cup soft bread crumbs 
    4 tablespoons butter 
    1 tablespoon chopped parsley 
    1 tablespoon onion, finely chopped 
    1 ? cups grated cheese 
    1 teaspoonful of salt 
    1/8 teaspoonful of pepper 
    Dash of paprika 
    3 eggs, beatenPreheat oven to 325 F.  Heat the milk and butter in a medium saucepan, until butter melts and milks is warm.  Add the onion, salt, pepper and paprika.  Stir in the bread crumbs, followed by the cheese. Add the macaroni.  Stir in the eggs and paprika.  Turn the mixture into a well greased loaf pan.  Bake about 40-55 minutes or until a knife insert in the center comes out clean.  Cool 10 minutes before turning onto a serving platter.  Serves six.

  • Macaroni and Cheese
    16 oz corkscrew pasta (I use cellantani)
    2 tbsp butter + 3 tbsp butter + 1 tsp butter
    5 medium shallots peeled & sliced thin
    3 tbsp all purpose flour
    1 tsp onion powder
    2 1/2 cups of 2% milk
    ? tsp salt
    1 tsp cayenne
    ? tsp wasabi powder
    ? tsp white pepper
    8 oz smoked gouda, grated
    8 oz sharp cheddar grated
    3 oz swiss grated
    3 oz gruyere grated
    ? cup + 1/2 cup parmesan grated 
    2/3 cup plain panko
    3 tbsp chopped fresh parsley

    Set up ingredients ahead of time. Heat broiler. Coat a 13" x 9" broiler safe dish with non stick spray. Bring a large pot of lightly salted water to a boil. Add pasta and cook approximately 11 minutes (follow package directions for the pasta). Drain and transfer to bowl. In 2 quart saucepan, heat 2 tbsp of butter over medium heat until melted. Add shallots and saut? until translucent. Remove and set aside. In same pot, heat 3 tbsp of butter over medium heat until melted. Add flour and whisk to blend. Keep whisking over heat for 2 minutes. Add milk in 1/2 cup increments. Whisk over heat for 30 to 90 seconds per addition and whisking each until super smooth. After milk is fully added, keep whisking over heat until mixture simmers. Add spices and whisk over heat for 3 minutes more. Put down whisk and pick up large spoon. Add gouda, swiss, gruyere, cheddar and ? cup parmesan in handful sized increments. Stirring each time until cheese melts in and sauce is smooth again. Work quickly so sauce does not seize up. Mix hot pasta into cheese sauce and pour into prepared dish. In a separate bowl, melt 1 tsp butter. Add panko, ? cup parmesan and chopped parsley and mix well. Divide evenly over pasta. Broil 2-3 minutes until browned. Watch broiler as it will burn quickly.

    mushroom mac and cheese , crock pot mac and cheese, muenster mac and cheese, bacon lovers mac and cheese

    If you really don't care about fat, go with the bacon lovers. Its unbelievably good.

  • My favorite (i dont like creamy macs) is my moms old recipie.  Just mac noodles and american cheese.  Splash of milk, salt, pepper, and a dash of cayen.  simple and goooooooooooood.

  • I love this recipe from Food Wishes - it has Dijon, Worcestershire and a secret amazing crunching topping, can't go wrong with that!
  • Pioneer Woman's Fancy Macaroni (this has caramelized onions and bacon!!)

    Ingredients

    • 4 cups Macaroni
    • 8 Tablespoons Butter (Salted Butter)
    • 2 whole Medium Onions, Cut In Half And Sliced Thin
    • 10 slices Regular Bacon
    • 1 Tablespoon Bacon Grease (reserved From Bacon Slices)
    • 1/4 cup All-purpose Flour
    • 2 cups Whole Or 2% Milk
    • 1/2 cup Half-and-half
    • 2 whole Egg Yolks, Beaten
    • Salt And Pepper, to taste
    • 1/2 cup Grated Gruyere Cheese
    • 1/2 cup Grated Fontina Cheese
    • 1/2 cup Grated Parmigiano Reggiano Cheese
    • 4 ounces, weight Chevre (soft Goat Cheese)

    Preparation Instructions

    Preheat oven to 350 degrees.

    Cook macaroni for half the time of the package instructions. Drain and set aside.

    Fry bacon until slightly, but not overly, crispy. Drain on a paper towel. Reserve grease.

    Melt 4 tablespoons butter in a skillet and then saute onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. Set aside.

    In a pot, melt 4 tablespoons butter (and add 1 tablespoon of the reserved bacon grease for good measure!). Sprinkle in flour and whisk to combine. Cook, stirring constantly, over medium heat for 1 minute. Pour in milk and half & half, then cook for 3 to 5 minutes or until thick. Reduce heat to low. Add salt & pepper to taste. (Do not undersalt!)

    Beat egg yolks and drizzle 1/4 cup hot mixture into the yolks, stirring constantly. Stir to combine. Pour egg mixture into sauce and cook for another minute.

    Add cheeses and stir until melted. Add onions and bacon and stir. Taste for seasonings and add more salt if needed. Add cooked macaroni and stir to coat.

    Pour into a baking dish and bake for 15 to 20 minutes or until sizzling and hot. Serve with red meat or a green salad.
