I've known for a long time now that I need to incorporate more protein into my diet. The biggest hurdle I've encountered is that I don't eat eggs or beans. I've experimented with scrambled eggs and omelets and have a really difficult time getting past the spongy texture. Likewise, I've played with a few different chili recipes and hate what I can only describe as the sandy or gritty texture of beans. I'm hoping some of you might be able to share your favorite ways to prepare these two items. I know I can get protein from other sources, and I do, but I also know I'm missing out on a world of healthy recipes by passing on these foods.

What about hard-boiled eggs? I don't like the yolks because of the texture, so I just eat the egg whites. They are also good on top of salad - or make an egg salad sandwich (there are healthy recipes for egg salad out there)
I'm not a huge fan of beans either, but skinnytaste.com has a recipe for Crockpot Chicken Taco Chili that is really good! I don't even really notice the beans, but they definitely add substance.
I would just try incorporating these two things into your diet in very disguised ways until you get used to them. I'm also a picky eater and I (or partner who usually cooks) just have to sneak things into food and eventually I will come around to eating it more.

I'm just a lurker, but...
If your scrambled eggs are spongy, you're not cooking them correctly. They should be light and fluffy. My tips:
1. Whisk the egg completely, until it is lighter yellow with no little clear pieces of the whites still visible. It should be a bit foamy. (The air makes them fluffier.
2. Cook them more slowly over medium-low heat, stirring constantly but gently.
Some people add water or milk to their eggs to make them creamier, but I find if you follow the above method, you don't even need the extra liquid.
Have you tried cooking your eggs in a different style besides scrambled and in an omelet? What about only using the egg whites?
You could also add more quinoa into your diet for protein.
