I make these two on an almost weekly basis. Both super easy and Milo scarfs them down. The first is for veggies, and is bubbling away on my stove as I type

The second is for meat eaters and is from the Busy Mum's Cookbook.
Maple syrup and mustard-glazed sausage, red onion and potato roast
You'll Need:
450 g pork sausage
2 medium red onions, cut into chunks
500 g small to medium sized potatoes, scrubbed and quartered
2 tbsp maple syrup {or honey works a treat}
1 tbsp grainy mustard
2 tbsp olive oil
2 tbsp chopped fresh thyme
s&p to taste
Method
1. Preheat the oven to 200/180 fan assisted.
2. Twist the sausages in 1/2 and then snip in two to create two smaller sausages.
3. Place the sausages, red onion, and potatoes in a roasting tin so they fit in a tightly packed single layer.
4. Mix together the maple syrup, olive oil, mustard and s&p and pour over the tin and kind of toss it all together. Scatter over with the fresh thyme and bake for 40-45 minutes, turning occasionally.

I've been on a homemade bruschetta and salad kick too.
Balsamic chicken with veggies. I got that off of skinnytaste.com And I got a sloppy joe recipe off of there that is really yummy.

I need to run but quickly I'd look at the way the cookie crumbles blog, I get a lot of good recipes there. A couple of staples are her red beans and rice and smitten kitchens tomato spinach and sausage risotto (don't think I have the. Name right there but it is GOOD). I also do a lot of casserole or pasta mixed with everything type dishes. My. K is eat food all mixed up better than all separate.
Oh and another favorite is minute steaks, also called cube steaks.
Dredge then in flour seasoned with salt and pepper, fry on both sides and remove from pan. Add sliced onions (depends on how many steaks you're making, I do one onion for three steaks, two or three for 5-7 steaks) and saut? onions until they have a bit of color and are nice and soft and have loosened up all the yummy bits on th ebottom of the pan. Put steaks back in, cover whole lot with beef broth and let simmer for 30-45 minutes, the longer the better. Season with salt and pepper and you may want to thicken the sauce more if you like a thick gravy but you don't have to. serve over egg noodles, and I usually do peas with it but any vegetable would work
Freaking delicious, the meat practically falls apart, and cheap for red meat, those little cube steaks are not expensive at all.
I've never heard of the Cookie Crumbles blog, thanks Jackie I'll have to check it out.
