Hey ladies!
I've got a challenge: I recently joined a 6 am boot camp class that runs until 7. I work at 7:45. With travel time, I have about 15/20 minutes at home to quick shower, dress, and grab some lunch.
I already have the shower/dress thing worked out, preparing all of my clothes the night before and I've got showering down to a science.
What I need are some ideas for make-ahead lunches, for the whole week ideally. Meaning I'd prepare all of my lunches Sunday evening, put them all in the fridge, so that all I'd need to do is grab and go.
Any ideas for (ideally also healthy) lunches that will keep for up to a week in the fridge? I'm getting sick of plain sandwhiches, and the cafeteria where I work is both expenisve and disgusting.

ETA: I do not have access to a fridge at work but I do have access to a microwave.

well assuming you can buy some freezer packs and grab one of those with each lunch, or freeze a water bottle each day
Salads (Greek, Caeser, just buy a bunch of veggies and make whatever)
Salad wraps (so I've done thai chicken or chicken caesar salad)
Any sandwiches...you could buy lunch meat/cheese/rolls and just make enough for the entire week (well I would eat those in the beginning of the week)
pizza bagels
have fruit packaged ready to go (or already packaged fruit like oranges and bananas)
I make little cups of hummus and or tapenade to eat wtih pita chips or carrots
And honestly I would buy a jar of peanut butter and keep somewhere at work or in your car...that will totally do in a pinch
random: it's funny they provide you with a microwave and not a fridge (since most things you would heat usually need to be kept cold... weird!). That said, I think most food would be ok at room temp until lunch (but it depends on how comfortable you are with that).
One easy thing would be to portion out leftover food from dinner, which is what I do every night that I make a meal where we have extra. Makes it super easy in the morning to grab a tupperware and fruit!

I can definitely stash a jar of peanut butter here! I like the idea of hummus as well.
I think portioning out everything at night is going to be the key for me.
I do have a freezer pack and a lunch bag so that will work nicely.
It is annoying that we don't have a fridge, but I work on campus at a Tech College and the microwave is the communal one in the cafeteria. We've been lobbying for a mini fridge for our office but there's really nowhere to put it as of right now.
