DH and I are leaving for Vegas this week. Can anybody recommend their favorite less expensive restaurants? We are looking to spend approximately $30 per person (not including drinks) on dinner a couple of nights if possible. I see so many recs for the really expensive restaurants, and we will try a couple, but I don't want to blow the bank every night.

In addition to the restaurants that have already been recommended, I would also suggest Todd English's Olives (good place for lunch) and Jean Philippe Patisserie (Aside from amazing pastries, they also have sandwich options; great for lunch).
Also, I recommend you check out restaurant.com. I was able to purchase gift certificates there for Strip Steak and Fleur. You can get a $25 gift certificate to Fleur for $10. If you sign up to receive email notifications, they will often have sales where $25 gift certificates cost only $2 or $3.
