Yummy Crock Pot Recipes

The only thing I've ever done is pot roast in the crock pot.  I would love to try some ideas if you all have any you like.

  • I like making salsa chicken.  Toss in a few chicken breasts, some chopped onion, a cup (or so) of salsa, some frozen corn niblets, maybe some black beans, some peppers and some jalapenos or chilis if you have them.  Add a bunch of taco seasoning (or mix up some spices to simulate that), and let it go most of the day on low.  Pull out the chicken, shread it, and return it to the crock.  Stir, and enjoy!  (it freezes well, too...)

    If we're lazy/short on time, we'll eat this with rice.  But, if we have more time, I'll make some guacamole, heat up some refried beans, still use the rice, and grab a bit of sour cream.  Yum.

     

    I'll also make bbq pork - take a piece of pork (I use loin, because it's low fat, other folks use other cuts... either work, although some might say using the crock is a waste of the loin).  Add some liquid, and let it cook much of the day on low.  Remove the pork, reserve the cooking liquid in another container, shred the pork, and put back to the crock.  Add some bbq sauce (a lot!) and some of hte cooking liquid.  Serve over bread/rolls with a veggie side.  Any remaining reserved cooking liquid can be used as stock in a soup later on.  This also freezes well.

    I haven't made it before but it got rave reviews from some nesties on another board. It smells yummy!

  • I do bbq pork once a month or so.  I just cook a shoulder roast (or what's on sale) in  some vinegar, water, and whatever seasonings I feel like until it's done.  I shred it, put it back in the crock pot, add jalepenos, onions, and bbq sauce.  Easy peasy.

    We do basically the same recipe but the site I found it on calls it "chicken fiesta taco bowls" and we serve it over rice with a sprinkle of cheese. We also add okra because it's in the freezer so why not.

    We also do a pulled pork in ours as well as roast and various soups. You could check out the crockpot365 blog, that's where I find most of my recipes. Well, that and pinterest.

  • I used to cook a whole chicken. Take out the goodies in the cavity and toss. Cut up an onion and throw it on the bottom. Add garlic, salt, and pepper. Cool on low for 8 hours or high for 4 hours. It falls apart and makes chicken stock. I would use it for chicken tacos, chicken pot pie, broccoli braids, chicken noodle soup, etc. and freeze half. Cheaper than chicken breasts that you are going to shred anyway.

  • This is my recipe Cranberry Chicken, as much as I love doing it in the oven like I have it written it was time consuming and I when I started working again I adapted it to the crockpot so it would make life easier. Just dump all the ingredients in the crockpot and cook low and slow for 8 hours. We have it with rice and asparagus normally. Its divine!

    This is my Stuffed Bell Pepper recipe it can also be done in the oven or in the crockpot. We love it. I play with the stuffing each time I make it so its fun to see what you come up with.

    Lasagna recipe this is mine but you can totally use your own if you have a favorite and follow the directions in the note for doing it in the crockpot. I do it all the time, I've even done it for a potluck at E's work. It flew out of the pot and he didn't get anything! Made me feel good.

    Love this one from Skinny Taste http://www.skinnytaste.com/2008/11/crock-pot-chicken-taco-chili-4-pts.html .We had it over rice but you can do it into chicken tacos or whatever. Super good.
