NPCER: Anyone have a good, quick recipe for chicken thighs?
Something that can be completed in about 1 hour and would be eaten by a fairly non-picky toddler?

This is what I'm making tonight. Dust thighs in flour, dip in egg, then breadcrumbs. Heat about an inch of oil in skillet and fry until golden on both sides. Drain on paper towels. Pop in oven at 325 for 15 to 30 mins to finish cooking.
These are perfect to make into chicken parm, or just eaten plain with mashed potatoes and a salad.
I usually do a stir-fry w/ chicken thighs and throw in whatever frozen veggies I have in the freezer:

I add garlic and diced onions while I'm cooking the chicken.
I make Vaguely Spanish chicken and rice with mine.
Season chicken thighs with salt, pepper, chili powder, and cumin. Heat olive oil in a pan and then brown thighs on all side until nice and crispy. Remove and set aside for a sec. Add a couple cloves of chopped garlic and half a chopped onion, saute until brown. Add two cups of rice and stir until rice is shiny looking. Then stir in a bag of frozen peas and carrots, a can or two of tomatoes, more chili powder and cumin and three cups of chicken broth. Heat to boiling. Submerge the chicken in there, cover, and cook on low until the rice is tender and the chicken.
As a note, I vary this recipe all the time. Sometimes I add chopped jalepeno when I put in the garlic and onion. Usually, I end up having to add more chicken broth or water because I suck at gauging how much I need with the tomatoes. So basically, trial and error. lol

We usually grill chicken legs (just season w/s&p& olive oil & coriander) and serve with Annie's Mac n cheese or naan and a veg/salad.
With leftovers (we grill 6-8 legs at a time) we have tacos or pita pizzas.
I use this recipe but with boneless chicken thighs pounded flat. YUM! My three year old loves it.
There's another recipe that I use but I can't find the link to it. It's from that same blog. Basically, you coat chicken thighs in olive oil, fresh lemon juice, oregano, salt and pepper, then roast in the oven for about an hour with potato wedges (also doused in that seasoning). So.freaking.good.
nitaw - maple syrup is crazy expensive. Would honey be an acceptable substitute? Cause I have a crapton of free honey, courtesy of my sister's hives.
lapiscine - no goat cheese on hand.... strangely enough. I'm debating whether blue cheese would be ok or not...
HAB - I had been planning on a half-assed version of paella but H forgot to thaw the chorizo. rrrrrr.
