Where to go for birthday trip?

My husband and I are deciding where to go for my 21st birthday. It would be around the 5th-10th of September. We would be traveling from Portland, Oregon. Which of our top choices sound the best?
San Diego
Austin
Phoenix
Denver
We aren't huge drinkers but we'd like to go out on the town at least one night and would like a place with an active nightlife but mostly fun activities to do during the day. We'd like to keep it as inexpensive as possible and are using frequent flier points to cover the airfare and maybe the hotel.

Well, I`m going to say San Diego because it`s the only place I`ve been to on your list, we just went last month and loved it.
The zoo is really awesome, you need almost half a day or more to see everything though (and GOOD walking shoes). We went on a whale & dolphin watch tour which was really cool and fun. Loved the La Jolla area with all the nice shops, good restaurants, and beach area. Coronado Island was wonderful, a huge beautiful beach, great eateries, and the Hotel del Coronado is a must see. If you plan on shopping at all, you must must go to the Fashion Valley Mall, a beautiful huge open-air mall that has every store you could dream of, I went 3 times!
We stayed at the Paradise Point Resort and I highly rec it. It`s like a tropical paradise, reminded me of Hawaii (well, kinda sorta, lol). They have these gorgeous beach bungalows, we upgraded to one of them once we got there, loved it! Also, this resort is in a great location that`s easy to get around to everything and not far from the airport at all.
I can`t give you any nightlife recs except to head to the Gaslamp District, that`s where all the action is...we didn`t make there unfortunately...
