specific question: freezing enchiladas
a friend gave me a great enchilada recipe but i am very confused how to freeze it. i am prepping for baby #2 and just saw the post below about freezer recipes and i'll definitely be checking out joelen's blog!
but quick thing about enchiladas specifically. so all of the filling ingredients are cooked and wrapped in tortillas....do you freeze those after wrapping and then cover with sauce after thawing and before baking? I feel like if you cover in sauce and then freeze the tortillas will be very soggy. But i can't seem to see a clear answer on most recipes online.
it also looks like some people put them in a ziploc and remove however many they want to bake (which makes me think they are not sauced) but then if you want them sauced they need to be lined up in a foil pan and wrapped fully. i'm confused!
anyone frozen enchiladas that can give me exact tips on the sauce situation? thanks!

This, except for canned enchilada sauce I make the sauce in advance and freeze that separately from the enchiladas. Works great for us!
