it's happy cow, organic ground beef.
What to do with it???
I don't feel like meatloaf or tacos, and we just had pasta in red sauce a few days ago (I try not to repeat meals if we still have the leftovers in the fridge from the last time)...
ANY ideas?
I'd do chili, but dinner is in less than 3 hours, and I don't think it would cook long enough to get good.
The Girl is 5. The Boy is 2. The Dog is 1.

it's raining out... and kind of chill-to-the bone kind of weather. ick for outside grilling.

My mom's family does inside-out stuffed peppers. It's yummy. I add extra spice to the meat mixture, though, for flavor.
(double the recipe for four servings: this recipe make about 2 dinner size servings for me)
1 lb. ground meat2 to 3 tablespoons onion1 tablespoon tomato paste diluted in either water or chicken broth1/2 cup rice, I use Uncle Ben's converted...for this recipe I don't use instant b/c the rice cooks quicker in a skillet...more surface spaceas much oregano, dash of cinn. , and as much salt as you want. I don't use pepper b/c I like to taste the freshpeppers1 cup chicken broth Saute the onion in some olive oil. Remove while you continue to saute the meat. Add the onion, rice, herbs & such, tomato paste and broth. Let the rice cookin the covered skillet about 15 to 20 minutes. Add one chopped or sliced pepper and mix it in the skillet dinner. Cover, Let it sit for about 15 min's before serving.How do you not like tacos????

Oh, I love tacos, don't get me wrong. I'm far more likely to do tacos with chicken, pork, or big chunks of beef cooking all day in the crockpot, though. Hamburger in tacos has lost its allure to me.
And, we only have mozzarella cheese in the house, and I'm not going to want to go out to get better cheese for the tacos. I know, I'm feeling lazy.

Mine was really modified, though. I cooked the beef in guinness and stock, added a ton of spices and carrots. The mashed potato part had dairy, though.
