What am I doing wrong? re: cooking salmon
Every time I make salmon, it tastes very fishy/gamey. I have made it both in the pan and oven. Is it the type of salmon that I'm choosing? Last time I got coho. Also, I always buy wild.
I'm not sure what I'm doing wrong because when I eat salmon in restaurants it tastes fine. 
Any advice is appreciated!

If you don't like the taste of salmon, save the good stuff for those of us that do and just buy the Atlantic/Norwegian/farmed stuff.
You shouldn't cover the taste of awesome, wild caught Pacific salmon with butter, dill, sauces, lemon, whathaveyou.

Turns out that the aspirations of my life don't involve ensuring that I'm pleasurable to the masses.
Seriously, the odds of you always getting skunky fish are slim, OP. If you don't like the taste of what you're eating, then eat what you're served in restaurants: Atlantic, Norwegian or farmed fish. Any of these are very much bland, non-"fishy" salmon.
It's also not Coho season, so you'll want to consider when you're eating the wild caught stuff.
Coho is typically a stronger tasting salmon versus Atlantic. Another thing that can effect the taste is if its been previously frozen. I buy wild Atlantic salmon that is not previously frozen. I buy it the day I'm going to eat it to ensure its freshness. I also buy from a reputable fish market. I would never buy grocery store fish (most is previously frozen anyway). You will pay more for the wild fresh but its worth it and you won't have that fish taste.
was it frozen? i find that salmon tastes different after it's frozen vs. fresh. maybe that's not true and it's all in my head but that's how it seems.
and where are you buying it? a great fish market is best.

other people have offered good advice - checking to see if you're getting the ones that have been frozen before. Also, I always cook it the day or day after I buy it.
How exactly have you been cooking it? I have never been able to get it to taste good when I do it in a pan, but have great results at just the right temperature/time in the oven. Also you could try doing a little parchment bag recipe, that's really moist and tasty. Another thing would be to pick out pieces that are evenly sized so that the whole thing cooks evenly.
ETA: when you open the package, salmon (or fish in general) should not have a strong smell - if it does, that means it isn't good.
