This is the only recipe I use for au gratin potatoes. Been using it for almost 20 years now.
? cup butter
1 small onion, chopped
2 T. flour
1 ? cups milk, scalded
1 ? cups grated cheddar cheese
1 tsp. Salt
1 tsp. Worcestershire sauce
? tsp. Black pepper
1 green onion, sliced
Peel and cut potatoes into ? inch size cubes. Boil for approximately 20 minutes, or until tender. Drain and cool slightly.
Preheat oven to 350 degrees. Melt butter in medium skillet. Add chopped onion and cook until tender, stirring occasionally. Whisk in flour. Add about 1 cup milk, and whisk constantly until thickened and smooth. Add remaining milk, 1 cup cheese, salt, Worcestershire sauce, and pepper. Cook, stirring until smooth.
Put potatoes into greased casserole dish. Pour sauce over potatoes, and stir gently to mix. Top with remaining cheese and sliced green onion. Bake until heated through and slightly browned on top for about 30 minutes.
