I know we get lots of posts asking for lunch ideas so I thought I'd share this quinoa recipe that I discovered and made today. It's super simple and keeps well so it'd be great to pack for lunch to serve over greens.
1 C quinoa, cooked according to package directions
1 can black beans rinsed
1 can corn rinsed (or use fresh/frozen...I used canned cause that's what I had)
1/4 c lemon juice (adjust to taste
zest of one lemon
1/4 c olive oil (I used a little less)
Salt, pepper, onion powder and garlic powder to taste
Mix together. Serve cold or room temp. over slightly steamed fresh baby spinach (or other greens) with a crumble of goat cheese.

This sounds delicious! Whole foods has something similar at their salad bar and I've been meaning to try to recreate it.
