I lived nearby for about ten years in Longmont. The Stanley Hotel is there (setting for the "Shining" and where Stephen King wrote the book.) You can stay here or go in and look around- very beautiful. Sometimes they even host ghost tours- supposedly haunted and very historic. Obviously, as you mentioned, RMNP, is a MUST! Beautiful drives, hikes, and LOTS of elk and wildlife. At least drive up to the top if not to Grand Lake and back. If you pass over the divide, you might see some moose. Good scenic golf course.
We once stayed at the Silver Moon Inn- a very nice, decent hotel, but affordable. However, definitely check out www.vrbo.com for a nice cabin rental- they are everywhere up there and I bet you can find a great one!
Definitely hit the Estes Park Brewery- ok bar food and good microbrews. There are two wineries in town worth visiting: Snowy Peaks and Valley of the Wind. Stay for a tasting and sample the Colorado wines (there are actually quite a few). There are TONS of little touristy shops that are fun to just stroll in and out of and sightsee . Restaurants: Poppy's Pizza and Grill, The Grumpy Gringo.

Love Estes Park! There are quite a few shops - some are really touristy and filled with junk and others are really nice and sell neat, one-of-a-kind things. DH and I have been many times, but one time we stayed at a nearby B&B called Dripping Springs. They have separate little cabins away from the main house and each one has a private hot tub.
Yes. RMNP is a must-do. But don't just drive it, get out and HIKE it. There are a variety of trail options.
We stayed at the Silver Moon In as well. It's a great location, but it was quite dated (like from the 70s). The bathroom was updated though, and it was clean and comfy. I don't remember any place that we ate that was memorable. Lots of little shops to visit, touristy stuff.
RMNP- we spent one day driving up to the top via Trial Ridge Rd, stopping at several places along the way to hike a little and take pics. Be warned it's colder at the top so bring a jacket or a fleece.

We also spent a day hiking to Bear Lake and a few other lakes in that area. It was quite beautiful.
We have only ever stayed at Nicky's. Nothing to write home about, but probably ok for the price. Conveniently located. (my parents book it, I've never researched accomodations there myself)
We loved The Egg & I for breakfast. Extensive menu, good prices & service. We also had a good breakfast at the restaurant at the Visitor Center just outside the Fall River entrance to RMNP.
Not a big help on what to see. We've always gone for family reunions so the only touristy thing we've done is go to RMNP, which you've got covered.
Make sure you check out the waterfall on Old Fall River Road, a right turn about 2 miles inside the Fall River Entrance. Neat place to hike around & take pictures.
