Food

Help me out.  I'm hard up for a dinner idea tonight...we have nothing in the house so I need to go to the market.

I also need an appetizer idea for Easter...Pinterest is failing me on my quest.  I don't want to make the usual standbys.

  • Meh our meals haven't too exciting since E is in school 3 nights a week. However tomorrow night he is making Mango Chicken. Its like eating heaven. I don't have the recipe at the moment but I'll have him find it for me tonight and I'll post it.

    As far as Easter we are having baked brie for apps and deviled eggs and maybe spinach dip. So I'm much help.

  • We had sesame ginger chicken the other night, and ooooooh yum! And all it was was chicken breast strips marinated in Newmans Own Sesame Ginger salad dressing. Yum!

  • I've got chowder in the crock pot.

     1 lb shrimp
    4 green onions (more if you like)
    2 cans cream of potato soup
    1 can cream of mushroom soup
    1 can whole kernal corn
    1 pint half and half
    8 ounces of greek yogurt.

      Saute shrimp and chopped green onions in butter until onions are tender. I seasoned them with creole seasoning which I made myself.  Add soups, corn, greek yogurt in the crock pot.

    Tomorrow I'm going to make chick-fil-a bites. I'll let you know if they're any good but here's the recipe if you want it.

    Blue cheese burgers.  Mix some in the meat and then top the burgers with the rest and let it melt.  Serve it on rolls with grilled red onion.

    Or you could make a blue cheese sauce out of Greek yogurt (I know you have some), black pepper, and the cheese...use it as a dressing for grilled buffalo chicken sandwiches.

  • I'm doing a beef roast for supper tonight.  Recipe is from my sister, but it's pretty simple.  I can't find the recommended fennel bulb around here, though, so I'll have to sub in something else.  Maybe extra onion.

     

    For easter, what about some type of filo wrapped thing?  Or mini-quiches (or quiche bites - make them in mini-muffin pans)?  Or marinated chicken skewers (I'll do this with a tandoori or vindaloo marinade)?  Or, if you want basic, some friends make pilsbury crescent wrapped mini-sausages, which are generally snapped up quickly.  Or bacon-wrapped baked dates?  Or bacon-wrapped jalapeno/cream cheese things?

    It is blue cheese...it's just an Italian kind of blue cheese.  I love it.

  • Beef Brocolli Casserole is my standby but I'm not sure if you like that kind of thing.

    1 lb lean ground beef (I use the leanest you can get)

    1 small onion diced

    3 Tbsp flour

    2 cups milk

    1/4 cup soy sauce

    2 cups cheese (I use cheddar)

    2 cups of macaroni noodles uncooked but you cook them before you add them to the dish.

    It calls for a bag of frozen brocolli but I like to use 2 fresh florets of brocolli better

    You just brown the beef and oninons.  Once it is brown you add the flour, milk, and soy sauce and bring it to a boil then turn it down and let it simmer for about 10 minutes.  Then you add the cheese.  Stir it in and make sure it melts.  Add the brocolli and cooked noodles).  Put it in a casserole dish and bake for about 20 minutes or until brown at 350 degrees.

    It is blue cheese...it's just an Italian kind of blue cheese.  I love it.

    Maybe I'll make burgers and use goat cheese for me and blue cheese for him.

  • I have a really easy Bean Dip recipe that is usually a hit for football parties or as a munchie.

    1 can Refried Beans

    1 Can of your favorite salsa

    Add together and heat up on the stove-- Add Shred Cheese to taste.

    Serve it in a crockpot with your favorite chips.

     

    I also love pigs in a blanket for an app.... cocktail weenies wraped in Pilsbury Cresent rolls. (Cut the dough in half roll them up with the cocktail weenies and cook in the oven per the crensent rolls instructions).
