I grabbed a pound of frozen ground turkey breast at my meat market the other day and now I'm wondering what it would be a good use for it. Is it too lean to do burgers? If so, what could I do with it?
Re: Ground Turkey Breast??
I use it for burgers, and add shredded vegetables to keep it moist.
You can use it for pretty much anything you would use hamburger, stuffed peppers, meatballs, sloppy joes, etc. I have several recipes in my blog that I use ground turkey in if you want to take a look.
Adventures in My Kitchen
I love turkey burgers - I add parm cheese, sundried tomatoes, basil, & seasoning.
I made this a few weeks ago and we all loved it:

with modifications: saute ginger, onion, garlic then add turkey and all else. use cumin and garam masala and turmeric. add chick peas. (omit potatoes and serve orver rice) serve with naan bread.
I've used it in burgers!
Chicken (or Turkey) Parmesan Burgers
Turkey & Chickpea Burgers
Turkey-Pesto Burgers with Grilled Onions
You can also use it in place of chicken in Chicken Meatball Subs or I used ground turkey to make a really good bolognese sauce once!
