What's for Dinner?

Monday I just nuked an Amy's Mattar Paneer frozen meal.

Last night I made a tempeh stirfry with red bell pepper, mushrooms and zucchini in Schezuan Spicy sauce. Tonight I will eat leftovers.

Tomorrow I am thinking I will have sweet potato latkes, spinach, and an egg.

Friday Mr. Mod will be home so it is a bit up in the air but I might do spinach and kale turnovers but add some chickpeas.

  • Monday was SkinnyTaste's Pasta with chicken sausage.

    Tuesday was Popeye's.

    Today is PreventionRD's buffalo chicken enchiladas.

    Tomorrow is LaaLoosh's chipotle orange chicken with basmati rice.

    Friday is pizza night, as usual.

  • Tonight is chicken wings on the grill with veggies. 
  • Wine with a side of hummus and Stacy chips. 
  • I like Moojunk's dinner.

     Mine will likely be chicken and broccoli with rice.  Nothing fancy just simple.  We had fantastic thai last night and it was my leftovers for lunch.

  • Monday was leftover calzones. 
    Tuesday was chicken sausage, onions, peppers, and broccoli salad.
    Tonight I'm roasting a chicken and some veggies.
    Tomorrow we will probably have leftover chicken and veggies.
    I haven't figured out Friday yet. Maybe I'll cook some gnocchi and toss it with some more of the roast chicken and make a salad. 

    Of course, if Lorne ends up on call some night, I'll probably feed the kids something easy and eat chips and wine after they go to bed, because that's what I usually do on nights when he's on call. If he traveled all the time I'd eat like shiit all the time.

  • Monday was steak, broccoli and potatoes

    Tuesday was leftovers - pulled pork and potatoes for one, carnitas rice beans for the other. Shared peppers.

    Wednesday: I think we're doing italian.

    Thursday: Chicken with whatever bag o veggies is in the house

    Friday: No idea but I have the day off so I'll probably figure out something to eat that requires me to stand on my feet for the least amount of time.

  • Tonight is leftovers and I cannot seem to be able to plan beyond that. Maybe chicken with a simmer sauce - assuming I still have simmer sauce in pantry and assuming I remember to thaw some chicken. I bought a bunch of veggies the other day and they're all gone and I haven't been able to get past that.

  • Monday:  grilled chicken and salad

    Tuesday:  bacon cheddar burgers that were so good I almost had it again tonight

    Wednesday:  scrambled eggs with salsa in a tortlla

    Thursday:  chili braised pork and sweet potatoes

    Friday:  I haven't decided yet

    Saturday:  homemade pizza 

  • I'm still getting the whole planning meals thing down. Meaning I don't really. lol 

    Tonight though I'm making Onion Soup roasted potatos, pulled pork and some peas. Basic and easy. Tomorrow it's grocery shopping so we can have real food. :D

  • Last night I made saut?ed chicken in a white wine reduction and sone farming awesome roasted vegetables.  Tonight was girls night.  We went to this butcher-style restaurant.  Not my thing.  The only meat I have much interest in right now is chicken.  Tomorrow I'm making a healthy crockpot healthy creamy chicken chili that I'm pretty excited about.

  • Noisy - it's pretty simple.  I think I can recall from memory.  Put two chicken breasts at the bottom of the crock pot.  Add one can black beans (drained and rinsed).  Add one can Rotel and one can corn (undrained).  Sprinkle seasoning on top: 1 tsp cumin, 1 tsp onion powder, 1 tbsp chili powder, one packet spicy ranch mix (or regular).  Stir together everything but chicken.  Top with one 8 oz pkg of fat free cream cheese.  I usually abhor the stuff but when my coworker made this she used the FF and it was delicious.  Cook on low 6 to 8 hours, shred chicken with a fork and serve.  Super easy, healthy and delicious.  I made a double batch to have some to freeze.
