My husband and I are planning on going to Niagara Falls for Memorial Day weekend. I've done some research on TripAdvisor and I have the Frommer's guide, but I'd love to get an recommendations from you guys.
We're planning on staying on the Canadian side. We're on the fence between staying at a Hilton property (we're HHonors members) or at at B&B, so please feel free to give your advice on those.
We'll be driving up first thing Saturday (getting there mid-afternoon), spending all day Sunday then driving back Monday mid-day. We know that we want to go to some wineries as well (one that was highly recommended to us was the Hillebrand winery where you make your own blend).
Other than that, we're planning on seeing the falls, going to the casino one night, but the rest of the time we're up for anything.

I stayed at the Hilton and I loved it! But I really like B&B's too so Ithink it would be a really tough choice. Since you're honors members and that is a supernice hotel, I say go for the Hilton.
For wineries, my goodness, they are all just one hop skip and jump away from each other. I would just pick a few along the same route, start at the one further away. We also did Peller Estates, Pilliteri, and Chateau des Charmes...I liked them all!
We ate lunch right in the heart of "Niagara on the Lake" at a pretty cool pubby place called "olde angel inn" and that was awesome, plus the little town seemed nice and relaxing to stoll around and shop/window shop.
We are going Memorial day weekend too! We decided on a B&B just cause we never stayed at one, A Day to Remember B&B.
We are going Friday - Sunday and Sunday staying one night in Toronto. I'm excited for a baby free get away, maybe we'll run into each other :-)
Def plan to hit the wineries. There are little kiosks along the Canadian Falls where you can buy a multi-pass for a bunch of the activities, like Maid, walk behind the falls, etc.
I just got back from there and can't wait to return. We had such a great long weekend.
I second the Sterling Inn and Spa- Great Boutique hotel, huge rooms, breakfast in bed was included. Loved our couples massage and aromatherapy bath.
AG restaurant at the hotel was fabulous. We also ate at The Keg- food was okay but it overlooks the falls. Nothing else of note sticks out that we had food wise.
We visited several wineries- I reccomend the smaller ones for more personalized service. I regret wasting time at Jackson Triggs and Inniskillin.
Niagara on the Lake is great and the drive along the parkway is beautiful.
We got this fun pass thing- for $20 per person. It includes the Sky Wheel, Mini golf, arcade tokens, the wax museum and some cheesey laser gun ghost ride. Loved the sky wheel which is $10 by itself. We had a great time and competitive fun with the mini golf and arcade games. We just ran through the wax musuem.
There is something for everyone there.
