baking question

I'm taking a carrot cake to a family lunch tomorrow. I'm going to bake the cake tonight because I'll have Ethan with me all morning, but I'd like to make the frosting in the morning. Can I leave cream cheese out overnight to come to room temp? I know I can with butter, but cream cheese seems scary. Why are the simple things so hard?

  • Personally I wouldn't. I'd probably make the frosting tonight, keep it in the fridge overnight, and frost the cake once we got there after the frosting has had a chance to soften up a bit.

  • I would not leave out overnight. Will you have a few hours in the morning to leave it out before you have to leave the house? Or maybe just do what Krisdi suggests.
  • You can throw it in the microwave on low for a few seconds to soften it up. That's what I do when I'm making dips.

  • Crossing over from TIP because I do this all the time.

    You're going to want to make the frosting the night before.  If you're doing a layer cake, put the frosting in between the layers and stack them, then mix a little frosting with water until it's slightly runny and use a pastry brush to coat the cake with it.  Put the cake and the frosting in the fridge overnight (the watered down layer is the crumb coat and it will harden and keep huge chunks of cake from breaking off when you frost it in the morning).

    In the morning, take the icing out and stir it up, then give it half an hour or so to heat up.  Then ice the cake normally.  Cream cheese frosting doesn't get as cement hard as buttercream in the fridge.  I never even really bother bringing my cream cheese up to room temp before throwing it in the Kitchenaid with the sugar.
