Food help. Easter.

My ILs are coming.  groomy and I both need to work Saturday.  We're trying to think of something tasty but simple to do for lunch, preferably that can all be prepared while I'm at church Sunday morning.

Current contenders are lasagna bolognese (which he seems to think will be simple and seems to have forgotten from the last time we made it that it will take half of Saturday to prepare) and meatloaf & mashed potatoes (which I contend he can make all while I'm at church but he maintains is "just as much work" as lasagna bolognese).

Ham is not an option.

ARGH.  What else could we do?

  • I will not be help, because I'm just going to brag. 

    My niece and her BF are coming in the AM to go to church with us.  They're taking my mom to brunch while H and I go to my ILs for brunch.  Then....for dinner we're going to meet back here and order pizza and play games.

    I can't wait. Easy peasy.  

    Although...I do make a "cheater" lasagna with ravioli.  You could do all the other stuff and just sub in the ravioli for the pasta and cheese?

  • Do they eat lamb? A butterflied leg of lamb without a bone cooks really fast. And it's Easter-y.

  • I would just do a nice roast beef or roasted chicken.  You can throw it all together the night before and toss it in the oven early Sunday morning.  Easy peasy.

  • If the sauce is already made (or you use jarred) then lasagna couldn't be easier ... I only recently learned the trick of not cooking the noodles first. Just put them in, dry and hard, and use extra sauce. I sweartoGod, it works!

     

    I'm serving a ham my son won at bowling ... feeling uninspired, sideswise.

  • If you're making the Bolognese from scratch, that will obviously take all morning.  What about stuffed shells w/a meatless marinara?  Whenever I want lasagna bolognese without the hassle I do this instead.  Way easier & hits the spot.

  • What about fish?  Salmon, couscous, and roasted asparagus.  You can prepare that in under an hour.  Elegant, spring-y, and easy.

  • I should have clarified - lasagna bolognese = homemade noodles, homemade bolognese, and homemade bechamel. He has made this before but somehow still thinks that MEATLOAF will take just as much time.

  • We both work all morning and most of the afternoon, but when we get home, we're grilling steak tacos.

     

  • Yeah, that sounds like WAY too much work. Meatloaf is good though. 

    I like lamb but have no idea about preparing it.

    I like Enchilades a lot and they make well a day ahead and just bake the day of. They may not be that eastery though.
