GRKaters, BensBabe & other gluten-free types
DH's BFF's wife was recently put on strict bedrest at 34w pregnant. DH's BFF is totally incompetent around the house with cooking and cleaning since she is a very Martha Stewart-like SAHM. He has celiac, so the family eats GF. (He's asymptomatic, so not super strict about cross-contamination and the like.) They also have a 4yo and a 2yo.
I thought I'd make a few freezer meals to send over to them this weekend. Any ideas for freezer- and kid-friendly GF casseroles or similar?

I just started adding gf recipes to my blog. The meatloaves or burgers world be good to make and freeze for them
Also check out the blog all day I dream about food. She's gf and low carb with great recipes.

enchillada's made w/GF corn tortillas, quishe, chili, soups w/out noodles (chicken and rice, or lentil, pea, etc), chicken and rice casserole are some ideas that popped into my head that wil freeze well.
On the other hand.... a woman here at my office got put on strict bed rest at 26 weeks, we took turns make dinner for her and her family every wednesday until her due date. We did not go in and visit/bother her, we just cooked dinner, dropped in on the porch at 6:00 and went on with our evening. She sent over their dietary restrictions/allergies and we all had a blast doing it! Her soon was allergic to dairy and egg's so we all had to learn a little about our cooking, but she was so grateful! They were all guaranteed a hot meal without the non-cooking hubby stressing about how to reheat!

You could also do something simply like a crock pot of Chili.. That way it's most certainly GF, and can last them a couple-few days.
As long as you don't use packaged seasoning mix, which usually contains flour.
The honey mustard turkey meatloaf in my blog is kid-friendly and really tasty. I've made it in muffin tins for me and DS.
