Anyone have a meal plan for the week? I need some new ideas of stuff to make! Here's ours for this week:
Last night: costco chicken, roasted potatoes and green beans
Tonight: Porkchops, mashed potatoes, applesauce and green beans or salad
Tomorrow: Pasta with homemade sauce and homemade turkey meatballs
Thurs: Homemade chicken pot pie
Friday: Going out
Saturday: Homemade mac and cheese (maybe buffalo chicken mac?)
Sunday: Mustard glazed ham, taters, green beans and rolls

H has been doing all our menu planning with me working so much, but I need to get back in the game to give him a break! This week is pretty shot because we're so busy, but here's how it's looking:
Yesterday: frozen pizza!
Tonight: My parents are dropping off leftovers (I love them; they're amazing)
Tomorrow: I'm going out with coworkers, so I'll grab something while I'm out. H is on his own!
Thursday: H will hopefully pick up something to grill on his way home. Last week he did rib eyes with tater tots! Soooo good...and super heathy!
Friday: out with friends
Saturday: not sure - we're going over to my parents' house to help set up for Easter. We'll probably eat with them.
Sunday: Easter breakfast with H's family and Easter dinner with mine.

Monday: steak tips marinated and baked with onions, tomatos and mushrooms...with corn and cheddar caserole.
Tuesday: Creamy tortelini soup with salad and cresent rolls
Wednesday: Chicken Divan with baked potato and salad
Thursday: frozen stuff
Friday: homemade stovetop mac and cheese with fish sticks and peas
Saturday: I would love to make the spicy thai curry shrimp from skinny taste, but i'm not too sure yet.
Sunday: major brunch up in boston with my family because it's my birthday!
ps...I'll add that I've totally been failing at my meal planning.
I made the steak tips on Sunday, and the smell is grossing me out, so I ended up eating cereal for dinner last night.
Then, I made the crock pot creamy tortelini soup, but I didn't read the directions, I just dumped everythign in the crock (isn't that what your supposed to do? haha), and the pasta is overcooked. Who knows, we'll see how it comes out when we eat tonight.
I do at least three vegetarian meals a week, and one night of no cooking - either going out, getting take-away, or do-it-yourself dinners.

Monday: Sweet corn soup with hot cheddar biscuits
Tuesday: Potato pizza and sliced apple salad with peanut butter & honey dressing
Wednesday: Spicy chili mac with cornbread

Friday: Lentil burgers and rice pilaf
Saturday: do-it-yourself dinner
Easter Sunday: Baked Spaghetti, homemade focaccia, Caprese salad, and a cake provided by MIL

omg I haven't heard of anyone else making a salad with apple and pb! My grandmother used to make one that was just romaine lettuce, apple (or banana), and peanut butter, and then the dressing (this will sound gross but I promise it's amazing, it's the only way my H will even touch miracle whip or mayonnaise) is miracle whip, milk, sugar, and a pinch of salt - just make it as creamy or thin as you want and as sweet as you want. no measuring. Now I really want to make this salad for dinner tonight!

As requested. All recipes slightly adapted from: The Urban Peasant?s Quick & Simple, TV Companion Recipes
Sweet Corn Soup
1/2 pepper (red, green or yellow), diced
1 small onion, diced
1 tablespoon fat (olive oil, vegetable oil, bacon grease, butter, etc.)
1 can cream-style corn
1/2 teaspoon salt
1 teaspoon black pepper
1 cup milk
Heat fat in saucepan, and saute pepper and onion until onion is translucent and pepper is soft.
Add milk, corn and seasonings.
Bring to a boil, then turn down and simmer for 5-10 minutes.
Serves 2
Hot Cheddar Biscuits
2 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon paprika
2 ounces sharp cheddar cheese, grated
1 cup sour cream or buttermilk
Preheat oven to 350 F.
Mix flour, salt, baking powder, baking soda, paprika and cheese.
Stir in the sour cream, mixing well.
Turn dough onto lightly floured surface and knead lightly.
Roll out to 1/2 inch and cut biscuits using biscuit cutter.
Bake on lightly greased cookie sheet for 10-15 minutes (or a cookie sheet lined with parchment paper).
I had planned on using leftover sour cream, but I actually had leftover Greek yoghurt -- it worked beautifully. l I had slightly less than 1 cup yoghurt so I had to add about 2 tablespoons milk to for a nice dough.
Potato Pizza
2 large potatoes, boiled and peeled
1 tablespoon butter
2 ounces grated cheese (parmesan or sharp cheddar suggested)
1/2 teaspoon salt
1 teaspoon pepper
1 egg
1 tablespoon chopped parsley
Assorted pizza toppings
Preheat oven to 450F.
Grease and lightly flour 9 inch round pie plate, set aside.
Mash warm potatoes with butter, cool slightly.
Add remaining ingredients and mix well.
Press potatoes into pie plate, smoothing bottom and building up sides.
Top with pizza toppings of choice.
Bake 2 minutes of until edges are golden brown.
The idea of tomato sauce on mashed potatoes didn't really appeal to me, so I made a white pie, using a seasoned white sauce (milk, flour & butter seasoned with pepper and vegetable stock powder) and chicken & lime sausage browned with onions and bell peppers topped it with a sprinkling of colby cheese.
