  • Tonight E is having steak. I'm making artichokes and pasta to go with it.

    I have a few crockpot meals in the freezer so I think I might do one of those tomorrow for E and I . Wednesday is E's night so I don't know what he is going to do. We have stuff to do stir fry so we might be doing that. It's getting harder and harder to do meal plans since E's schedule changes every 12 weeks for school and I hate making things for just for myself.

  • Grilled pork chops with jerk spice rub, grilled steaks, taco bowls, chicken stir fry, and I'll do my own thing (spinach salad with grilled chicken or chicken with avocado and cholula usually) on the H's night shifts.

  • Tonight - Chicken with caramelized onions in balsamic sauce 

    Monday - Spaghetti, salad, and rolls

    Tuesday - Taco Tuesday

    Wednesday - Chili and Cornbread

    Thursday - Black bean burgers with sweet potato fries and salad

    Friday - Make our own pizza, with salad

    I normally just steam mine. However a few times I've stuffed between the leaves with cloves of garlic and baked it for an hour. Delicious!

  • I have to double check my schedule. I want to do crock pot meals the days I have to go in at 0530.  I'm thinking BBQ pulled pork, chicken salsa, taco Tuesday, and salmon stir fry, Friday we'll probably go out.

      I need to go scavenge in the freezer in the garage and see what crockpot meals I have frozen. I need to figure out how to doctor up all of them. E was not a big fan of any of them the first go around. I hope they turn out better this time.

  • H is gone all this week, so no real plan.  I've been craving this salad, though, or at least my modified version of kitchen sink veggies.

  • I have no idea what we're going to do.  I want to grill tomorrow but our grill died on Saturday.  WHAH!

    Friday I'm in the office so I'm thinking BBQ chicken pizza...the rest of the week I have no clue.

  • After scheming with the neighbors I've nailed it down.

    Mon - Corned beef, cabbage, potatoes
    Tues - Tacos either beef or shrimp, TBD
    Wed - BBQ pulled pork, salad
    Thurs - Salsa chicken
    Fri- We're grilling out. I got apple/chicken/gouda sausage and beef jalapeno

    Since I have to be to work at 0530 Mon-Thurs, I see a lot of crock pot meals in our future.

  • Tonight: leftovers

    Tomorrow: soup (from freezer) and sandwich

    Tuesday: I'm making a big pot of pasta sauce.  we'll eat some, and freeze the rest

    Wednesday: our regular take-out pho, most likely

    Thursday: I want to make a nice beef roast (if I can find a decent roast... no luck today)

    Friday: not sure - probably beef roast leftovers

    Saturday: we're thinking of going to a ballgame, so ball-park food.

  • I don't make weekly menus since MIL cooks pretty much every night but, if anyone has some healthy suggestions for packed lunches (since I'll be starting my new job soon and will be working days until I get all of my proficiencies checked off).  I'm pretty much sick of yogurt and turkey sandwiches but, I'm not very creative so, any ideas?

    This blog, this idea from Pinterest, and this idea from Pinterest are where I'd go if I had to bring a lunch everyday.  Keeps it interesting.

    ETA: I swear there's a girl on one of the other boards (H&F, WC?, MM maybe...) who has a lunch box blog that I loved.  I can't find it right now but I'll let you know if I do.

    ETA2:  HERE it is!  They're vegetarian but full of great ideas for all.

    I bookmarked that to try soon.  It sounds super tasty.

     

    I've been craving pulled pork, so that's on the list this week, along with leftover enchiladas, spaghetti, and a savory French toast casserole from the La Leche League book.
