NDR: What's your go-to *non-carb* dinner?

I'm trying to cut carbs at dinner... but really struggling because I always want to make some sort of pasta! What do  you do for dinner that isn't pasta? Any suggestions?

  • Spaghetti Squash Lasagna is a personal favorite.

    Soups-chicken tortilla (minus the tortilla part), tomato bisque,

    Salsa chicken in the crockpot. I add black beans and sometimes serve wtih salad so it's sort of a taco salad

    Meatloaf/roasted veggies

    Asian chicken salad

  • Golly, I haven't made pasta in months.  We usually do a protein, a small amount of carbs (either a slice of bread or a spoonful of quinoa or brown rice) and a ton of veggies - sauteed or steamed or whatever.  We eat via the sonoma diet, mostly.  This is the most recent protein we did (last Friday): http://www.food.com/recipe/mediterranean-pork-chops-233893

    So usually 50% veggies, 20% carbs, and 30% protein.  We'll have a spoonful of honey greek yogurt and some strawberries for dessert.

    Cauliflower cheese

     Moussaka

    meat and 3 veg

  • Fish and veg

    Salads with leftover protein on top (steak strips, chicken pieces, beans)

    Chili/soups/stews

    The thing for me is replacing crappy carbs with whole grain and/or high fiber carbs. We've discovered this higher fiber pasta that is really tasty, for example. Whole grain bread. 

  • We don't eat pasta terribly often, but sometimes I'll have a really small portion of whole-wheat pasta with a larger portion of sauce/meat, then have veggies on the side. 

    We have roasted veggies on the side a lot.

    Stuffed Zucchini is good, as is spaghetti squash - it's a good pasta sub, or the spaghetti squash lasagna pp linked to is really good. I've also seen a lot of recipes for veggie lasagna that use eggplant, zucchini, etc instead of noodles. 

    Also, for me, once I broke the habit of always having a starch with dinner on weeknights, it didn't feel like I was "missing" something.

    Google Kalyn's Kitchen - she has a ton of low/no carb recipes and the ones I've tried have all been pretty good.

  • Eggs (hard boiled) on a salad.  Grilled meat.  Rotisserie chicken.  Frittata.

  • chicken cutlets with capers, onions and mushrooms and a lemon/white wine sauce over spinach.  Or parmesan tilapia over wilted spinach. 

    steak or chicken kabobs with red onion, squash, zucchini and a tomato cucumber salad

    I also really like Barefoot Contessa's roasted broccoli that's all over pinterest as the worlds best broccoli.  But I usually leave out the pinenuts and basil because I didn't realize they were part of the original recipe.

    I don't miss the pasta/rice/potatoes as much if I have several veggie sides.  So sometimes I'll make asparagus, roasted broccoli, sauteed mushrooms, fresh tomatoes, etc. to go along side whatever meat I cook.

  • I love this post! We just started to cut out carbs at dinner. Last night was a great salad, bunless burgers and grilled asparagus. So carbs, but trying to stay away from starch.

  • We like chicken broccoli alfredo with spaghetti squash instead of pasta as well as lasagna.

    We also enjoy Greek chicken salads and taco salads.

    When I want to try something different, I check out this blog: www.yourlighterside.com The chicken/cheese pizza crust was actually really good!
