Foodies - Dinner ideas using these ingredients

We messed up our sides this week so now I'm left with corn on the cob, a bag of small tri-colored potatoes (we usually grill them) and a can of garbanzo beans. Tongue Tied Any ideas? I'm going to the grocery store soon so I can get other ingredients too.

Oh and 1 very small chicken breast.

    You could do a corn salad, though I suppose corn, potatoes AND beans would be heavy on the starches. However, what about a corn salad (you just need some peppers and red onion) and then a potato salad with garbanzos thrown in for added protein? You could make it kind of middle eastern with cumin, lemon, and parsley.

    I am serious...and don't call me Shirley.
  • Soup

    Cut the potatoes into small cubes and cut the corn off the cob. Chop the chicken into small pieces along with half an onion and a couple cloves of garlic. Saute in a dutch oven or large pot until cooked through. Dump in the potatoes and the corn. Add the garbanzo beans, four cups of chicken broth and a large can of petite diced tomato. Season with a bit of oregano and salt and pepper to taste. Then let it simmer until tasty.

  • I'd do a salad- cook the corn and the potatoes, chill and add the beans and then add some olive oil and some salt and pepper.  That sounds good!
