You could serve it with coconut milk "whipped cream"!

Plus coconut milk ice cream. DONE.
ETA: Wait, the cookies are probably not gluten free. Meh, I'd see if you can find a homemade "ice cream cake" recipe and just use coconut milk ice cream.

The coconut milk whipped cream and ice cream is a good idea. Also, rice pudding made with almond milk or something similar is a great thought. The cakes and recipes all look awesome, but require a lot of wacky ingredients that I don't want to buy just for one dish.

We make banana "ice cream"...
take bananas, cut 'em up, freeze them, then run them through the blender.
If you want, you can add cocoa and/or peanut butter.
It's remarkably yummy, and crazy easy.
