Well $360 later, I am on the road to healthier eating

I set up a menu, got my ingredients, snacks, and stuff for the kids.   I really hope that the next trip will not be as much.  (Some of the stuff is spices that will be used again).

We even went out to eat for breakfest and lunch and I choose healthier options.

Breakfest was a peppers, onions, mushrooms, with ham and some hashbrowns.

Lunch was a piece of grilled chicken with tomato. (I was not all that hungry and I was driving it was the healthier easier option.

Thank you ladies for putting up with my food post for the last few days.

    There will be some filler stuff like grilled chicken and grilled porkchops. I also got fresh fruit and veggies, salad stuff, and some other odds and ends.

  • It will be less expensive.  You'll have things you can use again and as you get used to the healthier cooking you'll learn to stretch things farther.

    Good for you for taking the initiative.  Cooking for yourself is absolutely one of the most important parts of eating better.  You're on the right track!

  • Also, as you try new recipes and find ones you like, you will figure out which ones need $$$ ingredients and which are cheap.

    2 chicken recipes can cost vastly different if one needs specialized ingredients (like a whole 3$ bag of pine nuts, + a bag of fresh spinach- that is 7$ right there, plus the cost of chicken, rice, whatever else). 

  • Mmm, that Thai Beef salad sounds yummy!  I missed your food posts, but I love to roast a chicken for a meal, use the meat in a casserole or pasta dish, then cook all the bones and skin to make stock.  I freeze the stock and use it to cook rice, couscous, sautee veggies, etc.  A $10 organic or preservative-free chicken turns out to be pretty darn cheap once you get two or 3 meals out of it!
