Ok. So a lot of us have talked about the crockpot chicken salsa meal. Last time we made it, I used Newman's Own mango salsa, black beans, and chicken. I added half a block of neufch?tel cheese (basically cream cheeses) after I shredded the chicken.
Omg y'all. It was *A-mazing*. Mmmmm so good. That mango salsa made the meal. I forgot it was a different salsa and kept saying "this is so good this time. Why is it do good?" lol

So I bought the salsa today. Do I just dump it in the crock pot with a few chicken breasts? What type of beans did you add?
I can't do the cheese will that ruin in? Life is sad without cheese.
Just put your chicken breasts in the crockpot and dump your salsa over the top as well as your beans. You can use black beans or pinto beans. I use black when I do it because I can sneak them into E's diet that way. I've done it without cheese or sour cream and its just as tasty.
Ditto pp. I don't use sour cream or other cheese most of the time I make it. I prefer black beans. I drain and rinse them, put those in first then the chicken and layer the salsa on that. I'm not sure it matters what order. In my mind I put the black beans first so the chicken doesnt stick to the bottom and salsa on top so the chicken stats moist. Eh. I do spray my crock pot with olive oil non stick spray so it probably doesn't matter about the layering, but the salsa on top does help it not dry out.

While I gave away my crockpot years ago (not much use for it when you're vegetarian), I think I can adapt this. I've added more meat into my diet recently, so something like this might be good in the semi-monthly chicken rotation.
In fact, I might experiment for lunch today.

OK, I must be missing something. The chicken definitely was tender enough to shred easily, but it was still pretty bland, despite all the chipotle powder I dumped in it.
I did modify the recipe in that I don't use store bought salsa. I threw all the ingredients in that I normally use to make my salsa, so it should have been flavorful. Just, somehow, together it didn't all work. I even used half a mango!
But, I'm still inspired to make it do something somehow. I think I'll try it with mojo instead of salsa next time.
