DH wants to get me a DSLR for mother's day, but we don't know much about them. Please break it down for me. I need something that's user-friendly and not crazy expensive. Thanks for the help, I really appreciate it.

What kind do you have? Nikon D90 (don't make them anymore I think the D7000 replaced it.)
What do you recommend for a beginner? Any Nikon or Canon entry level DSLR is great. Can't go wrong with either. I would recommend going to a store and holding one in your hand to see which one feels right in your hand.
What is a must-buy when I first get the camera? A speedlight for inside (pop up flash ruins pictures.) And a prime lens (a lens that doesn't zoom.) 35mm 1.8 and 50mm 1.8 is what I would recommend for someone just starting out.
What else should I know before purchasing the camera? Do not buy the kit lens. Buy the body and go for a nice prime lens instead. (See above.) If you want to get the best possible photos out of your camera you will need to shoot in manual. Not saying you can't get good photos in auto, but once you learn how to use your camera in manual you will never go back.

What do you recommend for a beginner? I like the software on the Nikons better than the Canons but I think it's all personal preference. Go to Best Buy or somewhere similar and check them out before plunking down the cash. You can get a much better deal through Amazon than you can in-store.
What is a must-buy when I first get the camera? A tripod and a wireless remote and an external flash. You may also want to consider getting Photoshop Elements or something similar (I know a lot of people like Lightroom but I've never used it). I like being able to edit my photos even if it's just black and white or brightening it up a bit.
What else should I know before purchasing the camera? I disagree about the kit lenses. I got two lens with my camera a 18-35mm and a 55-200mm. They were great for learning the general theories behind photography and what my style of photography is. Now that I know a little more about how things work I'm looking to get a new lens and I think it will be a prime but I still haven't decided if it'll be a 35mm or a 55mm. You can easily drop a few hundred dollars on a prime lens only to find that you need something more flexible (and with a kid you definitely do, especially when they start moving & you're trying to do candid shots). This is why it's important, IMO, to figure out what your main objective with your photography is going to be.
What kind do you have? I shoot with a 5D Mark iii but I use it for work.
What do you recommend for a beginner? I would recommend any of the Canon Rebels (I started with an xTi but I think the t2i replaced it.) Nikon is comparable but I know nothing about them.
What is a must-buy when I first get the camera? I would say skip the kit lens and get a 50mm, especially if you want to do portraits. (the Canon would be the f/1.8 and is only $120.)
What else should I know before purchasing the camera? I would say invest in a class or some books to learn how to shoot manual. I think owning a DSLR is pointless if you only use auto because point and shoots are so great these days. Also I would say get a good strap with padding. Your neck will thank you.
I would definitely go to a camera store and try them out. What feels good to one person might not feel good to you.

What do you recommend for a beginner? I think the Canon Rebels or the Nikon D3000-5100 are good for beginners. It just depends on what you like better. Our friends just ordered the Nikon D5000, because he said all the research he did said that was the best one to get.

What else should I know before purchasing the camera? To think about what kind of photography you'll be using it for- travel, portraits,etc. Then, look up what kind of lenses/ camera are reasonable for that kind of photography.
But yes, go to the store to try them out.
