Has anyone pre-made breakfast burritos?
I am wondering if I can make a few on Sunday and freeze them, nuke for a little bit and eat on my way to work. I have never frozen eggs before and don't know how long they would last in the freezer without getting a weird consistency.
Any good recommendations?

We do this for our camping/bicycling trips (we're having a burrito-rolling party next week to prepare for the summer). We use scrambled eggs, hash browns, cheese, green chile/salsa, (some with meat). We roll them and wrap in foil, then reheat on the propane stove or campfire. You could do the same on a smaller scale (we do the Chipotle-size tortillas) and wrap in Saran wrap or a ziploc bag. Scrambled eggs reheat just fine.
I also microwave 2 scrambled eggs with spinach and garlic in a round dish and freeze them on a bagel thin or bun with cheese. They reheat very well, too.
You can defrost either the burrito or sandwich in the fridge for a day, or just microwave frozen.

Basically just take them right from the freezer and microwave them for 1-3 minutes.
