We went to Las Vegas in January and I blogged about all of the restaurants we ate at here. My two favorites were definitely L'Atelier de Joel Robuchon at MGM and Le Cirque at Bellagio.
You need to be more specific, there are thousands of restaurants here. What is your budget? Are you looking to splurge or not? Any types of food you particularly like or dislike?
I agree - type of cuisine and budget would be helpful. Off the top of my head, though, some of my favorites are Dos Caminos in the Palazzo (They have guac that is to die for.) and Burger Bar in Mandalay. MIX in Mandalay is good, too, and a good view of the strip.
Check out Tripadvisor for reviews. You can search by price range or type of cuisine.

Wow, really? We were just there a few months ago. Bummer.
Boo, we liked Dos Caminos, fun atmosphere. If you're in the area and looking for good Mexican, Isla in TI is very good.
Mesa Grill at Cesars.
