New favorite breakfast

for the weight-watching gals, figured I'd share.  I probably won't blog it, because it's just too easy.  But I figured I'd share here.  I'm literally obsessed now.  I made it at first jsut to use up some leftover veggies from teh fridge, and it turned out SO GOOD!

It makes easily 4 servings, which is nice to make on the weekends then have some leftovers.  I heated up some of the leftovers this morning and then just whipped up a couple eggs to throw in top this morning. 

Veggie Hash

2 russet potatoes, scrubbed and diced small
1/2 onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 small zucchini, diced
1 small yellow squash, diced
1 tsp salt
1 tbsp grill seasoning

start with like 2 tbsp olive oil in a large skillet.  Add the potatoes, cook until they start to soften, around 10 minutes (stirring occasionally).  Then add onions and bell pepper, cook 4-5 minutes.  Season with salt and grill seasoning.  Add zucchini and squash, cook an additional 2-3 minutes. 

Top with 2 eggs, whatever style you prefer (I did over-easy, was delish!)

  • Yum! I'm going to start working potatoes back into my diet. This seems like a good healthy way to do it. I might try this with sweet potatoes, too. Thanks!

    This thought also crossed my mind last night!  If you try it before I do, let me know how it works!
