Another recipe help Q: Muffins

I wanted to make muffins tomorrow morning for the playdate I am hosting.  I planned on making banana chocolate chip muffins that have whole wheat and some oat bran in them, but in three different grocery stores only could find pretty green bananas.  I don't think it's probably a good idea to make banana muffins with bananas that aren't ripe enough.

I have frozen raspberries and frozen mixed berries on hand.

Anyone have a good, "healthy" muffin recipe to share?   I'd like to use whole wheat flour and the oat bran if possible, but it's not a must.

  • What I tend to do a lot is just use my regular bran muffin recipe and I'll add the fruit of my choice too it. I do Blueberries regularly, usually about 1 cup in a recipe. What you can also do to make them more moist if you are using whole wheat flour is use applesauce instead of oil.

    I actually made the banana muffins because they mashed up pretty good when I mashed one for Mackenzie for breakfast this morning :)

    Would you share your bran muffin recipe?  I'm on the hunt for a good one.

  • Bran Muffins:

    1 1/2 cups wheat or oat bran

    1 cup buttermilk (I always use regular milk with 1 TBSP lemon juice - you can also do vinegar) let it stand for 5 min.

    1/2 cup oil - or substitute applesauce

    1 egg

    2/3 cup brown sugar

    1/2 tsp vanilla

    1 cup flour - whole wheat or white

    1 tsp baking soda

    1 tsp baking powder

    1/2 tsp salt

    1/2 cup raisins or dates (optional)

    Like I mentioned I'll throw in 1 cup frozen fruit - blueberries etc.  I've also done it with 1 cup banana's and 1/2 cup chocolate chips. 

    Mix all ingredients together until just blended. Bake at 375 F for 18 minutes in muffin pans. 

    Makes approximately 1 dozen. (depends on how much extra fruit etc you add.)
