Fresh Ginger?

How difficult is fresh ginger to work with?  I had a recipe to make for dinner last night that called for fresh ginger (it was honey-ginger pork), and I decided to wait and stop on my way home from work yesterday to pick up the fresh ginger (I meal plan so I had all the other ingredients at home).  Well, when I got to the store, I chickend out and bought ginger in the spice aisle.

So, now I feel stupid for chickening out and am wondering how hard it really could've been to use last night.

  • not hard at all.  peel with a paring knife or even a spoon.  grate with a microplane grater.  store in the freezer wrapped in foil.  fresh ginger is great and your dish would have been better for using the real thing!

    ditto.  I usually just cut off a little so it's got a fresh end and grate it.  super easy!

  • I love fresh ginger! My only trick is to snap off a small piece in the store because normally that stuff is sold in huge pieces for $6.99 and you'll never use that much.
