I'm trying to clean up our diet (in conjunction with working out more consistently), and wanted to know if you could share some of your favorite healthy chicken recipes...

Chicken Taco Soup
1-2 cans crushed tomatoes
Taco Seasoning
1 small can green chilis
1 can black beans rinsed
3 cups chicken stock (or more if you like it thinner)
1/2 can corn
2-3 chicken breast
** Once the above ingredients come to a boil, I throw the raw chicken in and cook in the soup for about 20 minutes on a low boail, then I remove the chicken and dice up and throw back in the soup to simmer for another 15 minutes --- yummy! (You can add tortilla chips (not healthy!), sour cream, avocado, cheese on top if you like)
Salsa Chicken
Place chicken in a oven baking dish and add 1 tsp taco seasoning over both sides of chicken. Then top with salsa (I prefer homemade) and bake in oven for 20 min at 360.
Homemade salsa: 6 tomatoes diced up, bunch of cilantro chopped up, 1/4 small onion diced up, 1/2 tablespoon lime juice, sprinkle of salt, 1/4 tsp ground cumin. Yum!
Chicken tarragon
Cut 3-4 chicken breasts into small pieces and coat with some WW flour seasoned with salt and pepper and 1 T tarragon (dried or fresh is fine). Brown in some olive oil until mostly cooked through. Deglaze the pan with some chicken broth about (1/2 cup) and the juice of 1/2 a lemon. Cook until the sauce is slightly thickened and the chicken is cooked. Serve with veggies and brown rice.
Lemon Rosemary chicken
Marinate chicken cubes in the juice of one lemon, 1/4 cup olive oil, 2 crushed garlic cloves and 2 t of fresh rosemary for about an hour. Skewer with grape tomatoes and/or onion wedges and grill until chicken is cooked through.
We eat a lot of basic grilled chicken with the McCormick GrillMates marinades.

We get a lot of recipes from skinnytaste.com - she has great, healthy recipes that don't taste like diet food.
We also do a lot of grilled chicken. I usually marinate it in lemon juice, minced garlic and whatever fresh herbs we have on hand (rosemary is a favorite).

Maybe not exactly what you're looking for, but about every 8 weeks or so, DH marinates & grills several giant Costco packages of chicken breast tenderloins. We freeze them in dinner-sized portions. They make my life so incredibly easy. I have a bunch of recipes that I use them in, & dinner comes together very quickly.
If I don't have time for a full fledged recipe, we have the chicken over salad greens for a Caesar salad, or on their own with vegetables & maybe rice. Otherwise, I substitute them in any recipes that call for rotisserie chicken. This recipe instructs you to cook the chicken, but I substitute my pre-cooked chicken anyway & it's awesome.
