Dublin - restaurants, city center, etc.
We're going to Dublin, and staying pretty much in the heart of the city. We won't have a rental car, but will be getting out of the city for 1-2 days to take tours of the countryside.
As we will be seeing Dublin itself by foot and public transportation, can you give me a list of places that I must see/must eat, whilst there?
My husband and I aren't drinkers, so anything centered around beer wouldn't be a highlight for us.

We really enjoyed our meals at the Brazen Head (historic pub) and Botticelli's (Italian fare). And for a much more informal but equally tasty meal, the Epicurean Food Hall on the North Side was good too!
I found the 1916 Easter Rebellion walking tour to be extremely worthwhile and informative! I know you mentioned you'll be taking tours of the countryside, but I'd also recommend taking the DART to the coast-there's not really anything to do in Kiliney but the views are amazing!

Have you booked your tours outside of Dublin yet? We did a private tour with Kieran of http://www.tourdublin.ie/
He was absolutely awesome and we loved every minute of it. He has basic tour ideas but really tailors his talking and where takes based on what you seem interested in. We did a ton with him all in an 8 hour time span on the Wicklow Tour.
I highly recommend him!

We aren't drinkers but we liked the tour of the Guiness Factory, St. Stephens Green, and I also really liked the tour of the Kilmainham Gaol (jail).

I did a day trip from Dublin with Over the Top (www.overthetoptours.com) and really enjoyed it.
For eating, try Bewdley's cafe on Grafton street for berry scones and tea; the ambiance is fab and be sure to notice the stained glass windows.
The Mermaid Cafe in Temple area was fabulous--great food in a laid back atmosphere and some extremely memorable ice cream made using vanilla fudge. Delicious. http://www.dublintourist.com/details/mermaid_cafe.shtml
