I am applying to a teaching job at a school where I was previously a long-term sub (about 4 years ago). I was there from December through the end of the school year. I am trying to include a few sentences in my cover letter about my time there, something along the lines of how I enjoyed it and would welcome the chance to work there again. Any suggestions on how to word this?
I also have to write an essay type of thing for the same job about why I am interested in this position. Any tips on what to include?

I'd just be straightforward. Mention when you worked there, what grades/courses you taught, how much you enjoyed it, and how your previous time there shows you would be a good fit for their school.
No idea about the essay.
