Anyone have any really awesome dessert recipes they've made lately? We're having a house guest this weekend and I plan on cooking Friday night and I want to make something yummy for dessert. I feel like I always fall back on my usual cake, apple pie/cobbler, or cookies, and would love to mix it up a bit instead of always reaching for my go to recipes. Thanks!

and the peanut butter buttercream frosting recipe on this blog - http://www.lovefromtheoven.com/2012/03/31/peanut-butter-ball-chocolate-cupcakes-with-peanut-butter-buttercream/ is AWESOME! I made the entire recipe once, but now I just do the frosting on regular chocolate cupcakes. so good!
This is my mother in law's recipe and it is super easy to make and always gets rave reviews! The base is shortbread like with a cheesecake middle and an apple cinnamon topping.
Base:
1/2 cup butter or margarine
1/3 cup sugar
1/4 tsp vanilla
1 cup sifted flour
Middle:
1 250 g package of cream cheese (I use light cream cheese)
1/4 cup of sugar
1 egg
1 tsp vanilla
Top:
1 (540 mL) can of apple pie filling
1/4 cup sliced almonds
cinnamon
Base: With a pastry blender, combine flour, sugar, vanilla and margarine. Press into the bottom of a greased 9'' springform pan.
Middle: combine cream cheese and sugar. Beat until smooth. Add egg and vanilla and beat again until smooth. Pour over base.
Top: spread apple pie filling over cheese layer. Sprinkle with almonds and cinnamon
Bake at 400 F for 10 minutes. Reduce head to 250 F and bake another 50 - 60 minutes. (my springform pan has a glass bottom so I usually just check to make sure the bottom of the crust is golden brown to know if it is finished)
We like to top with whipped cream when served.
