what's cooking?

I feel like I eat the same things over and over and I've been absolutely awful about meal planning this week.

Sunday: We had an impromptu BBQ.  BBQ chicken (this bbq recipe, slightly adapted), hot dogs, grilled veggies, mashed potatoes and corn on the cob.

Monday: Chicken piccata and couscous

Tuesday: leftovers from Monday, plus a salad

Wednesday: Pork roast in the crockpot and leftover mashed potatoes with a salad

Thursday: probably leftovers from Wednesday

Friday: dinner at Jones for my birthday after we go see Norm MacDonald at Helium! Can't wait!

  • Saturday - Melon & prosciutto apps, and homemade pizza w/sausage & fresh mozzarella that we cooked on the grill.  An all around amazing dinner that we actually ate on the patio, and not in front of the TV.  Made a pitcher of freshly squeezed lemonade spiked with Citron vodka...I see a juicer in my future/

Sunday - Grilled another pizza to use up the prosciutto (I always have 2-3 balls of pizza dough in the freezer for a quick dinner).

Sure.  Go to Trader Joe's.  Buy their frozen bag of orange chicken.  Add broccoli and bake according to directions on the bag.  Serve over Trader Joe's frozen jasmine rice that you've cooked in the micro for 3 minutes.

Haha - I wish I could take credit and I wish that it were healthier!  I am trying to use up stuff in the freezer for the earlier part of summer so that I can stock with with healthy prepped meals for when the baby comes.
