What's for dinner tonight?

There seemed to be a lot of interest in a daily dinner thread, so I'll start todays! :)

I like to cook a lot of chicken at the beginning of the week and then throw it together with veggies throughout the week for quick dinners.

Tonight I'm not sure, I have broccoli, poblano peppers and brown rice in the fridge, along with the cooked chicken.  I'm thinking maybe an Asian stir fry tonight?

  • We had a TON of the bbq chicken left over from yesterday- I'm going to put it on a pizza with caramelized onions, jalapenos, fresh mozzarella, and cilantro :)

  • Stuffed Peppers!

    It is so easy--here's my quick recipe. 

    You will need white rice, a jar of tomato sauce, ground beef, bag of shredded cheddar cheese, med. onion, and a pepper for every person.

    There are 2 ways to do this. I don't like eating green peppers whole, but the hubby does. So I cut mine up and mix it in and actually stuff his. It is up to you. Mixing it in is also kid friendly.

     

    Cut up onion and pepper if you are mixing it in. If stuffing the pepper, only core it, remove stem and seeds. 

    Boil the rice.

    Cook the hamburger until brown with onion and any cut up pepper you may have to mix in. (If you are eating them whole, cook just onion and hamburger). Feel free to season as you want with Italian seasonings like oregano, rosemary...etc.

     Drain beef and onion. Put in casserole dish. Put rice in casserole dish. Put all but one cup of cheese in the dish. Mix together with enough tomato sauce to cover everything. 

    If eating whole peppers. Take the pepper that has been cored and deseeded and flip upside down in a saucepan with water. Boil about 7 min or until soft. Drain water out and dig out a divet in the casserole mixture and place pepper in this. Stuff pepper with some of the mixture. 

    Spread the rest of the cheese on top of everything. 

    Bake 20 minutes at 350 bake!

  • going out with the girls from my old job tonight.  It's pizza and martini night for me.  I made Mike a big salad and grilled some chicken for him to put in it once he gets home from work.

  • holy crap... i have noooooo idea! we had leftover meatloaf last night (meatloaf sandwiches, YUM!) and so now all that's gone, so i'm at a loss.... H usually cooks, but i have a feeling he's gonna play the "it's your turn" card....  greaaaaaaaaaaaaaaat..... :)

    We're still working on the leftovers from my brother's graduation party. We have potatoes, chicken piccata, ribs, and lasagna to choose from... plus lots of desserts!  Can't wait! :)

  • Planning for meals is tough...I do something like the image below. It helps a ton. Every weekend I make a general idea of what I want to make for the week/leftover week/take out night. I show Hubby (he normally is happy to just eat...hahaha) and then do the grocery shopping for the week. It saves so much time and money! I only occasionally have to go out in the week for fresh produce or if I have a craving for some kinda snack. I also have an attached white board to list the grocery list and hubby adds things he either wants or needs to it.

     Makes life so simple! This particular image has meal cards in pouches so you can grab and go easy...I don't necessarily have a fancy board like this, but a white board with different spaces.

     

    Hope it inspires some of you!

  • We had grilled pork chops with a lemon, garlic, and herb marinade and pasta with pesto sauce.  I added goat cheese to my pasta.

     

    I'm just glad  the hubby was willing to grill tonight!  It was delicious!
