So, what's for dinner?

Thought I'd kick start it today. I'm going to post and run, have to drop charts off to the office and run a few errands. 

We're having marinated pork on the grill, quinoa pilaf and grilled veggies.

  • We have turkey chilli cooking in the Crockpot!  I hope these posts inspire me to cook a little more exciting meals!  Quinoa pilaf sound good!

  • unfortunately i think tonight will be a "eat on the run" night.... i promised my niece i'd go to her softball game (she's 9) and my son is sooooooooooooooooo excited to go so i can't back out... even though i kinda want to cuz it's my ex's family... but, i promised her, so i'm gonna be a good ex-aunt and do it...... even though i REALLY want to sautee some more squash and zuchini like i did last night.... it was SOOOOO good, and we have a ton more! mmmmmmmmm now i'm hungry....................

  • Italian sausage with green peppers & onions and I might make some french onion dip for chips :)

  • Leftover stuffed peppers--We leave for our honeymoon this weekend so no more cooking for me...just packing and cleaning...
  • tonight i'm packing and cleaning the apartment so it'll probably be something simple like a big salad... i need to eat up that spinach anyway.

    i started topping my salads with a combo of fat free ranch, salsa & avocado, it's SO good!

  • Not sure yet- But probably ham/ swiss/ apple wraps with roasted apricots with creme fraiche & blackberries :)

  • We're having grilled shrimp and steak. We're hosting a little week before the wedding dinner for H's cousin and his fiancee. I like being on the other end of things!

  • Probably quesadillas w/ leftover BBQ chicken from earlier this week.

    I didn't post yesterday because I went out for dinner, but hubby had leftover pulled pork, so I can share that recipe! It's really easy and yummy!

    Salt & pepper 3-4lbs of pork (shoulder, butt, picnic roast, whatever), put in crockpot and add 1 can of soda (I've used coke and root beer, both were good but I liked the root beer a little better. I might try Dr. Pepper next time!). Cook on low for 8 hours. Remove pork, shred and add your favorite BBQ sauce.

  • Neither hubby nor I were all that hungry last night and ended up being satisfied with a pasta salad I made over the weekend.  So tonight we'll be having the herbed tilapia, couscous and mixed vegetables I had planned for last night.  bpphoto - your pulled pork recipe sounds easy and delicious :)
