Thought I'd kick start it today. I'm going to post and run, have to drop charts off to the office and run a few errands.
We're having marinated pork on the grill, quinoa pilaf and grilled veggies.

tonight i'm packing and cleaning the apartment so it'll probably be something simple like a big salad... i need to eat up that spinach anyway.
i started topping my salads with a combo of fat free ranch, salsa & avocado, it's SO good!

We're having grilled shrimp and steak. We're hosting a little week before the wedding dinner for H's cousin and his fiancee. I like being on the other end of things!
Probably quesadillas w/ leftover BBQ chicken from earlier this week.
I didn't post yesterday because I went out for dinner, but hubby had leftover pulled pork, so I can share that recipe! It's really easy and yummy!
Salt & pepper 3-4lbs of pork (shoulder, butt, picnic roast, whatever), put in crockpot and add 1 can of soda (I've used coke and root beer, both were good but I liked the root beer a little better. I might try Dr. Pepper next time!). Cook on low for 8 hours. Remove pork, shred and add your favorite BBQ sauce.
