I wish! DH HATES breakfast for dinner!!
DH is working late so I think I'm just going to eat leftover lasagna. Here's my recipe:
Saute ground turkey or beef, add a little garlic and/or red pepper flakes. Drain fat and add a jar of tomato sauce and simmer for a couple minutes. Mix a little container of ricotta cheese, I use low fat, with an egg and a package of frozen chopped spinach thawed. Layer meat/tomato mixture, UNCOOKED lasagna noodles, ricotta/spinach mixture and mozzarella cheese. Mine usually makes 3 thinner layers, but you could make 2 thicker ones, I find the extra pasta layer makes the meal stretch a little further. Then pour 1/4 cup warm water down one of the sides of the pan. I usually put the water in the tomato sauce jar and shake it around before I pour it into the pan so it's more like tomato water, I think it gives it a little more flavor. Cover pretty securely with foil, you want that extra water to cook those noodles! Bake 45 minutes and let sit for 10 before serving.
Tonight we're headed to my brother's house for a cook-out (and my father is coming home tonight after walking 490 miles in the Camino de Santiago!) and tomorrow night we're having a very prego couple over for a cook-out at our house!

This sounds awesome - how do you cook this in a slow cooker? I'm trying to get better at using that thing.
I made a rub with chili powder, brown sugar, pepper, salt, cumin, paprika...can't remember if there was anything else. Then you literally just put them in the slow cooker for 6 hrs, no water or anything! Our slow cooker has a timer and switches to warm when the time is up. When I get home I am going to throw them on the grill for a minute with some bbq sauce.
