What's for dinner?

I think we're doing pesto chicken burgers with kale chips... Unless I can get DH to take me out ;)

  • We also usually eat out on Fridays. I have been trying to cook more but since MIL is coming home from the hospital today and coming to our house we may just do pizza or whatever she would like to eat.
  • i get to see hubby tonight!!  woo hoo!  we probably won't see each other until after 8 tonight though so our "dinner" with each other will probably be wine and sexy time  hahaha
  • Slow cooker ribs, corn and baked potatoes!!  We normally go out tonight, but I convinced H to stay in so we can work on the house!

  • I wish! DH HATES breakfast for dinner!!

    DH is working late so I think I'm just going to eat leftover lasagna. Here's my recipe:

    Saute ground turkey or beef, add a little garlic and/or red pepper flakes. Drain fat and add a jar of tomato sauce and simmer for a couple minutes. Mix a little container of ricotta cheese, I use low fat, with an egg and a package of frozen chopped spinach thawed. Layer meat/tomato mixture, UNCOOKED lasagna noodles, ricotta/spinach mixture and mozzarella cheese. Mine usually makes 3 thinner layers, but you could make 2 thicker ones, I find the extra pasta layer makes the meal stretch a little further. Then pour 1/4 cup warm water down one of the sides of the pan. I usually put the water in the tomato sauce jar and shake it around before I pour it into the pan so it's more like tomato water, I think it gives it a little more flavor. Cover pretty securely with foil, you want that extra water to cook those noodles! Bake 45 minutes and let sit for 10 before serving.

  • Tonight we're headed to my brother's house for a cook-out (and my father is coming home tonight after walking 490 miles in the Camino de Santiago!) and tomorrow night we're having a very prego couple over for a cook-out at our house!

  • my parents want to take us out to dinner at a home-style cooking restaurant.... thing is, the place they wana take us is over an hour away! ugh..... idk if we will go or not....

    This sounds awesome - how do you cook this in a slow cooker? I'm trying to get better at using that thing.

    I made a rub with chili powder, brown sugar, pepper, salt, cumin, paprika...can't remember if there was anything else.  Then you literally just put them in the slow cooker for 6 hrs, no water or anything!  Our slow cooker has a timer and switches to warm when the time is up.  When I get home I am going to throw them on the grill for a minute with some bbq sauce.

  • We cooked a roast chicken the other night so we had chicken salad sandwiches tonight with the left over chicken.
