i just made this last night.
pasta (i use penne)
fresh mozerella- cut up ( as much as you would like)
fresh basil- chopped
2 cloves of garlic-minced
pinch of salt and pepper
olive oil.
chopped tomatos (about 3)
Cook pasta. Cut up tomatoes, basil, garlic and mozerella. Toss all together with olive oil and salt and pepper. Enjoy

Favs at our house are Pasta de Charlotte, Fish tacos, grilled flatbread pizzas and grilled chicken for salads, burritos, sandwiches.

Shrimp with orzo and feta
Grilled pork chops. I marinate them in soy sauce, red wine vinegar, brown sugar and garlic powder.
Ive got a recipe for Mexican Chicken with Ranchero Sauce. I've only made it once but it was yummy.
I use my crock pot a lot so I don't have to light the oven.
Pasta de Charlotte here too! And something similar to what Chris posted.
We'll do grilled chicken and then use it for chick caesar salads and wraps or on top of Greek salads. I also make a lot of cold pasta salads.
Ok, i know it has been posted before but now that I see it all over, can you post the Pasta de Charlotte recipe? Please! Maybe it will inspire me to cook!

Pasta de Charlotte
Cooked pasta (i usually use penne)
2 small zucchinis, sliced
3 cloves garlic, minced or sliced
4 good size tomatoes, diced
1/4 red onion, chopped
few shakes of Italian seasoning
olive oil
salt and pepper
ingredients can be altered to your taste
Cut up all veggies and put in a bowl mix with oil, seasoning and S&P. Add cooked pasta, mix and enjoy!!!
I forget who said their DH doesnt eat veggies. I dont eat veggies either but I just eat around them. Its yummy!!!!
