This week meals - need suggestions
I want to try and cook some stuff today, so that we don't have to use the oven or grill later this week when it's oppressively hot. What are your favorite make ahead things?

I love to do a big pasta salad (1lb box of pasta, crap load of whatever veggies we have, and balsamic dressing).
You could roast a whole chicken and have that with the pasta salad, in a quick stove top quesedilla, chicken sandwiches, or in a big salad. If you don't even want to cook it yourself you can grab one of the rotisserie ones at the grocery store. If I know we are having a ridiculoulsly busy week this is my go to.
crock pot, crock pot, crock pot!
I love getting a pork roast (like the Hatfield preseasoned ones) and letting that cook all day and then just making a veggie and brown rice as a side. The sides take all of 10 minutes to prepare.
Salsa chicken is another one of my favorites, also in the crock pot.
I know you said no oven or grill, but you didn't mention the stove top? If you're not opposed, I love breakfast for dinner (ie scrambled eggs and toast). That's a top lazy meal of mine!
Here are some cold things (or things that don't require the oven) that we make...
chicken salad (you could do it in the crockpot or just get a rotisserie from the store)
red beet and goat cheese salad (or greek salad, caprese salad)
tacos (you could do the meat in the crockpot ahead of time, then microwave it)
chips & guacamole
Anything that uses quinoa or cous cous as a base. Make that stuff ahead of time and keep a large batch of it in the fridge. Do different versions--Greek-inspired, Mexican-inspired. Just change the beans, seasonings and cheeses. You can top greens with the quinoa mixture or just enjoy by itself.
Thanks everyone. I got a turkey breast last night that I plan on roasting, also made a big batch of quinoa and cooked some black beans. I figure with these things we can put something together.
I also got some bacon and baby spinach so we can BLTs one day, OMG so good and reminds me of childhood, instead of lettuce we use the spinach.
OMG. I love BLTs and it reminds me of childhood, too. I have enjoyed replacing the L or spinach with basil. So, so good.
