I am working on a menu for Aisling's 2nd birthday party. It will be held on an August afternoon in a (non air-conditioned) park pavilion. So we will have shade, access to outlets, but no cooling system (beyond coolers with ice for drinks, of course). There are grills that we can use, but I'm trying to think of alternatives, as I don't want DH stuck at the grill in the heat all afternoon either. We were thinking of doing simple foods, like a chicken finger tray, pretzel tray, fruit salad, and I have someone doing custom cupcakes and cake. Of course I know I need more than that- but wanted to see some thoughts from you girls on what might hold up in weather that could very well rival today's temps.

I would do a big green salad with dressing on the side and maybe a pasta salad. Dry hoagies, mixed pizza's cut into smaller squares for easy picking
We have a big picnic on the beach every year, for the stuff we want to keep cool, I get a few large silver trays from the dollar store, load them with ice and then put the bowls and things on top. It will only last a few hours but enough to do the job for the time being

You can do a grilled veggie tray--it can be enjoyed at room temp or warm. I grilled zucchini, eggplant, scallions, plum tomatoes, and asparagus and brought it to a BBQ.
