Help me come up with food ideas!

I'm hosting a bridal shower for a friend next month, and it's time I really start thinking about it!  It's going to be on July 15th, which is 4 weeks from this coming Sunday.  First, do you think it's too soon to send out invites, or should I wait another week?

 It's going to be in the middle of the afternoon (start time I think will be 2:30pm), so I'll just need to do some appetizers/finger foods and then cake.  Her mom and his mom will help with food if I want them too, but I don't know if I should ask what they want to make or ask them to make something specific??

As for what I have planned so far, I have a taco dip, tortilla chips, and a black bean salsa for the appetizers/finger foods.  For desserts, I'm going to get a cake and also make Mexican Wedding Cakes (they're going to Mexico for their honeymoon). 

What other yummy, delicious appetizer/finger foods would you suggest?

  • I would throw in some fresh fruit. Maybe more tropical fruits like pineapple, mango, papaya, and kiwi. Bananas are more tropical and cheap! But they turn brown and mushy.

    You could do pineapple upside down cake too - you can make individual ones in cupcake pans! 

    Another idea is different kids of salsa. If you know what area they're going to in Mexico you can research some of their local foods. 

    And you can never go wrong with mini-tacos or tostada type dishes! yum, yum!

    An easy appetizer I make a lot, we call them frog eyes.  Buy the claussen pickles (whole), lunch meat (we've used ham or salami), and cream cheese.  Spread cream cheese over the slice of meat, roll up the pickle & slice.  They are amazing & everyone loves them!  I found a recipe here. (although that doesn't really go with the mexican theme, haha)

    I have a recipe for homemade salsa that's really good and easy. here.

    I also have a really good cheese ball recipe that I can get if you're interested.

    I like the tropical fruit idea!  The pineapple upside down cake would be a good alternative to the traditional bakery cakes!  Thanks.

  • Definitely do fruit as part of the finger foods along with 2 or 3 kinds of salsa (mild, medium and spicy or tomatillo). I personally love guacamole.     Would it be to much to add a pickle tray and veggie tray? Some people may not like the mexican themed food.

Plus I have a recipe for a fantastic Pineapple Upside Down Cake Daiquiri on there too, which you could always make virgin if you wanted. 

    I do think that fruit would be an awesome idea too. Everyone loves fruit! You could put it on skewers like I've seen on pinterest like here http://pinterest.com/pin/94786767126793972/

    Oh! There is also the mini fruit pizza bar which I had a friend's party the other day and I will *never* have a party/get together without them again!  http://pinterest.com/search/?q=fruit+pizza+bar

  • I'm pretty sure it is just cream cheese, powder sugar, and lime juice, but if you wanted to make it healthier you could always use zazz up some greek yogurt. That's what I'm gonna do!

  • Just threw a shower myself.  The hit was the chocolate fondue with fruit, pretzels, marshmallow, angel food cake, brownie bites, etc.  YUM!
