Would eggplant parm freeze well?
I am putting together a list of meals I want to make and freeze before the baby is born. I am sitting here watching the food network and this chick has me drooling about the big casserole dish of eggplant parm she just made. Do you think it would hold up in the freezer, or would it get too soggy?
Any other good meals worth making in advance?

Yes. You can freeze it, but I believe you must re-heat it from frozen. Thawing the eggplant first would cause it to be soggy/sloppy.
You can never go wrong with soups. Lots of them. Matzoh ball, tomato, veggie, etc.
Chili freezes well.
Lasagna. Pot pie (make the inside of the pie and freeze it separately. When it's time to cook, throw it in a frozen pie crust and cook).
Good idea with the pot pie! That's one I hadn't thought of.
Currently, I have a ground meat aversion...so no chili for us. But hopefully it will return after the baby is born. Chili is easy enough to throw together in the crock pot at the last minute.
Ground beef...I get the shivers...
Do you have a recipe for chicken chili? I've never made it before. Bonus points if I can use a rotisserie chicken!
Well I'm a lazy chili maker. I buy the packet of seasoning and follow it to a T. But I use ground chicken or ground chicken breast instead. Waaaay less grease so it's relatively heartburn friendly, too.
ground turkey is good in chili too!
In addition to eggplant parm, I do eggplant rollatini- roll the eggplant with some spinach and ricotta, top with gravy and mozzarella
